The ONLY Braised Pork Bun (刈包) Recipe You Need

  • 【Ingredients】
    [ Hakka Style Braised Pork ]
    400 g pork belly block
    3 scallions
    6 ginger slices
    10 garlic cloves
    1 tbsp cooking oil
    Water
    [ Seasonings ]
    2 tbsp Taiwanese dark soy sauce
    1 tbsp light soy sauce
    1 tbsp Taiwanese rice wine
    1 tbsp black sugar
    1 pinch of salt
    [ Garnishes ]
    Steamed lotus buns
    Chopped coriander
    Sautéed Chinese pickle vegetables
    unsalted peanuts (for powdered peanut sugar)
    sugar (for powdered peanut sugar)
    【Steps】
    1. Slice 6 pieces of ginger. Section scallions into 3 inch chunks.
    2. Cut pork belly into large cubes (about 1*3 inch thick).
    3. Parboil the pork belly blocks in boiling water. Once the scums are rendered from the meat, drain them well and transfer them into a container. Pat the meat until the surface is as dry as possible.
    4. In a stewing pot, add 1 tbsp oil and sear the pork cubes on all four sides. Once the surface becomes golden browned, add garlic cloves, ginger slices and scallion sections to sauté until fragrant.
    5. Add enough water to cover the ingredients. Bring to a boil and discard the scums on the water surface. Mix dark soy sauce, light soy sauce, black sugar (or brown sugar) and rice wine into the pot. Taste the broth to see if any adjustment on flavor is needed. Cover the pot with lid and simmer for 2 hours.
    6. Optionally, turn off the heat and leave the pot covered on stove for 2 hours and reheat before serving. This way allows the meat to absorb more flavor from the marinade.
    7. When the pork is almost ready, start prepare the steamed lotus buns. Cook the buns according to package instructions.
    8. For powdered peanut sugar: mix 2 portion finely granulated peanut with 1 portion white sugar.
    9. Take a slice of braised pork and slot it into a lotus bun like how you stuff a pita bread. Enjoy your pork belly bun with sautéed Chinese pickle vegetables, powdered peanut sugar and chopped coriander; or enjoy them with vinegar coleslaw and onion slices for a fusion twist.
