- The Most Delicious Cream Puff Recipe - Choux au Craquelin
Necessary materials:
For Craquelin:
- 60g butter
- 50g granulated sugar
- 60g flour
(freezer 20 minutes)
For the Choux Dough:
- 130 ml of water
- 60g butter
- 1 pinch of salt
- 50 g of flour
- 20g starch
- 1 teaspoon of baking powder
- 2 eggs (m)
(190 degrees 20 min)
For the Cream:
- pastry cream
-1.5 cups whipped cream

I had a bit of anxiety when they put two eggs directly into the dough
How do you make the cream?
I’m 1/4 French with a French/German GMA and my hubs forces me to make them for him with his puppy eyes. This is the standard true French recipe. I dumbed down the ingredients bc no one wants to spend &$$$ on top of the line vanilla etc.
btw -Most use 4 eggs vs 2 if u want ur cream puff to be larger and airier.
Filling:
STEP 1: 1.5 cups Warm milk 1/2 cup heavy cream with vanilla bean paste, scrapings or liquid & bring to boil while whisking (use non stick pot) and set aside. The milk may develop film at the bottom so u should strain this into another bowl. Set these aside.
STEP2: But….In
Another bowl: mix very very well-2/3 sugar, 1/4 cornstarch, 1/4 teaspoon salt, 6 egg yolks ROOM TEMP so they don’t cook-
STEP 3: THEN pour a small amount of the liquid from step 1 (make sure it’s not still really hot) over the egg yolk mix& whisk. Then pour the rest.
STEP 4: Then reheat on med low till u see bubbles stirring consistently. This is where the cornstarch will thicken it.
When it’s done- pour in bowl and cover the top layer with plastic bc it will become filmy.
Tips:
- mixing is the key. I use a hand mixer bc I’m lazy
- u can just use reg milk but cream is yummy
- to get the whip cream texture that calls for mixing it with “Stabalized Whip cream.” AKA Diplomat Cream. Essentially beating heavy cream with powder sugar while u have a little bowl of gelatin and water blooming. When it’s fully whipped, microwave the gelatin just enough to liquify it again the poor over whip mix on low.
Once u have the whipped cream, I like to mix 1:1 filling to whip cream. It’s all how u like it. I whip both and the pipe it.
2 things I do. I mix the whip cream and the pastry filling in small amounts bc I can use both in diff things.
Egg white idea:
Macaroons: it has 3 eggs whites, beat with 1/4 cup fine sugar with a bit of salt to very stiff with vanilla added. (1/4 tsp cream tar tar helps at the beginning)
Then add in ur sifted mixture of 1/2 cup of fins almond flour 1/2 cup of powdered sugar. Slowly folding it into whipped eggs until lava flow. Pipe in circles. Smack pan to let out bubbles. Let it sit for 30-45 for a film on top.
300 degree at 17 min middle of oven (depending where u live). Rotate pan halfway.
U can use ur cream puff filling to fill these.
Or use egg whites to make a buttercream vs whipped cream
