Matty! That bike is a babe!! Don’t know if I could ever love that style of shifting. But I do love the look of that bike. I have randonneuring friends that would salivate all over this bike.
I just received my VOR and I must say that I should have paid more attention to the seat tube length because then I would have ordered the large size. Unfortunately I went by the range of heights (5.6-5.10) recommendations. Sadly, I didn't see the problem until I installed the saddle and saw just how far above the frame the saddle had to be for me to get proper leg extension. I'm also checking for toe overlap to see if it is within manageable limits.
I wonder where this frames are made? Taiwan? Anyway, with the narrow frame tire spacing on the VO, given the trend toward wider tires, I think it's worth looking at the Soma Fab and New Albion frames, which are also Cr Mo "Tange" steel, with French style forks, and that will accommodate 38mm tires with fenders, or wider without. My 2¢.
Top shelf rims with best in business hubs. Far, far more useful investment than carbon hoops, at least for rim brakes. I love, love those brake lever. Will you believe me? I have been waiting on these for 3 years but yet to get them in India. Sigh...for brakes, if anyone is short on budget but wants the same level performance as the Gran Cru ones, consider tektro r559. My custom build is very similar, just that clearance for 38mm tires with fenders.
So it goes down to a 1x1 ratio. I'd want something lower than that for long uphills tbh. Just put a triple on it and a 9-speed cassette and you're in business. 24x34 is good for long rides with lots of hills.
What size large chainring are you using? I'm using a 46 and it looks like the lower water mount boss on the seat tube may be exactly where the front derailleur band needs to go.

Okay, yes, deep dive on the VO will be coming soon - on to the question of my impression of this bike, in short, I LOVE it.... now, most people with new bikes will say the same thing, but here's why I love this ride over all of my other bikes (carbon and steel)... comfort, plain and simple. I think the comfort comes from the wishbone seat stays; quality of steel tubing, French style forks and then running the 37 Panaracers at 40psi... the geometry is perfect for those LONG days in the saddle. I have a $15K custom steel bike which I also love, but, to be honest, I think I prefer pulling out the Rando more often than the #1 bike. Can't say enough good thongs about the VO frame and the chosen components....

I'm very surprised and pleased that this frameset and the Grand Cru brakes will accept a 38mm tire.
Yeah, slight correction there... those are 33mm Panaracers, not 38mm... sorry. 😞

Looks sweet - the only thing I would do is go 2x (white makes a nice one) and change to ultegra derailleurs.
So you got the 38 slicks on with plenty of room it looks like, that’s cool.
