When that garden comes in, you’re going to be working in the garden and canning primarily, and that’s OK by me. And then in the winter with nothing much going on, the cooking videos are tremendous. But mixing it up is always good too. You do you, and I’m sure everyone will be happy with whatever you produce. That chicken looks amazing and I can’t wait to try your sauce recipe. I was married to a man from Pa Dutch country for 30 years and his step mother taught me to make red beat eggs, chicken pot pie with homemade noodles, pepper jelly, halupkis, canned red beats and so much more! I love your channel it brings back fond memories!
Great looking meals!! When I am making extra casseroles I line the Pyrex with plastic wrap, fill the dish and freeze. Once it is frozen I take it out of the pan and wrap it well , label it and put it back. On the day I want to cook it I unwrap it and put it back in the dish to thaw and bake. I use the same four Pyrex over and over and my "Pyrex shaped" casseroles stack so well in the freezer and don't take up so much space. It's just the two us so one recipe make two meals and I usually double it and get four.

I am also from PA, moving back in 2 months. Red beet eggs are a staple for sure. I can my beets with the vinegar and sugar that way all we have to do is cook and peel the eggs and throw everything in the jar with no extra work. My mom did this growing up too. So much easier.
I love all of your videos. I would love some budget meals that are from scratch. Too many budget cooks on TH-cam use processed foods. I think that food can be made cheaply without coming from a box or a factory. ❤
Great recipes, Kelsey! I want to try your cabbage rolls, the potato leek soup, and bread. They all look so warm, delicious, and comforting. I used to make cherry cobbler when my children were little. I would get cherries from a market in Bucyrus, OH and can them every year. They were so yummy. My oldest granddaughter still loves making my cobbler. It's a great dessert especially with vanilla ice cream! I love watching bread making because I don't do that much anymore. I make sweet breads, but haven't done much with yeast breads. I loved your video on all the different kinds of breads you made a while back. Honestly, I love all homemaking things and gardening things (although I can't garden anymore). I think these skills are so valuable today. If I was young again, I would totally do what you are doing...building a homestead with gardening, canning, freezing, and all of that preservation stuff. You and your husband are very wise in building your homestead. You are a wonderful homemaker and mother. It's so nice to watch and listen to someone who has such high values for family and home life. My husband loves halupkis! Little tip - If you core the cabbage before you boil it the outer leaves fall away easily. We also like to use the inner leaves to make halushki at the same time.

All of it! What I enjoy about the what I make in a week videos - even when it’s repeat recipes - is the newly refreshed inspiration for my own very tired meal plan brain. Working a full time job makes the homemaking a little bit harder (but it’s what I truly enjoy I don’t like letting myself see it as a burden - but sometimes you just can’t help it). I appreciate seeing your content as it is. I really extra like when you share recipes that are dear to you. I’ve already picked out a few to bring into my home. Q&A is fun, I like it but understand they’re not for everyone. When families like yours share Q&A I appreciate just knowing it’s possible - being a full time homemaker seems so out of reach for us. We will get there eventually - but it’s nice to see the how-to of it all. Of course, only sharing what you’d be comfortable with. I so enjoy your cooking and gardening, as both are of high interest to me. I realize I mentioned before I serve 24 children daily and my goal is to not only provide great nutrition, but teach them a way of living. I garden, cook, and preserve food with them. I’m new to the channel but I love being able to get motivated or inspired with meal ideas (I’m that girl that has a gazillion cookbooks and makes the same 5 recipes on repeat these days 😝). For me, since we weren’t blessed with tiny humans I’m most interested in the content about the garden (finally, a fellow PA gardener who has to deal with humidity and Japanese beetles and things 😆), preserving, make-ahead meal prep, bread making (especially sourdough discard use ups if you do them) and most especially, how to use the foods and ingredients we can / put up. I didn’t grow up canning so while I’ve got that part down, I don’t find myself reaching for much that I’ve preserved or don’t try things I’m not sure about because I have no idea how I would use it.

I live in Ohio and my mom always canned pickled beets and would make pickle eggs in it for holidays. I love pickled eggs!! Lots of Amish and German heritage in Ohio too.
I miss pickled beet eggs from my childhood. My family is from Wisconsin with some Pennsylvania Dutch and aways had these but I grew up in CA and my parents still cooked from that region.

I struggle with actually doubling or tripling recipes amd freezing for later. I too want to make the most of my time, as i work part time. Keeping my kids fed and nutritious, homemade food in season is important to me. I look for ways to preserve what i find on sale at local stores. Your recipes look delightful. Blessings!

Hubby and I homesteader on 1/3 acre in a neighborhood for 16 years until 2020 and found a little over an acre and we are loving it. Hang in there what you are doing, is totally doable on 1/4 acre!

I’ve heard people say that if you freeze the whole head, it peels easily too. I’ve never tried it but thought I’d pass it on 😊

I struggle with actually doubling or tripling recipes amd freezing for later. I too want to make the most of my time, as i work part time.
Keeping my kids fed and nutritious, homemade food in season is important to me. I look for ways to preserve what i find on sale at local stores. Your recipes look delightful. Blessings!

I was born looooong ago in Lancaster, PA and lived there until I was 10, then went back every summer. All of my relatives were there. We love Golabki. My gram taught me to grind up some ginger snap cookies and add them to the tomato sauce. It sounds weird but trust me, it’s sooooo good. I’m enjoying all your videos so much!

We do pickled eggs using pickled beet juice. We also call the cabbage things cabbage rolls.

So now I’m wanting cobbler😋. I have the same lovely vintage Fenton cake stand! I was just showing it off to a friend the other day! I snagged it at a yard sale several yrs ago-then I saw a matching bowl at an antique store about a month later-way out of my budget so I went home and looked it up-lucky to find it wasn’t just pretty but vintage treasure😍

Hubby and I homesteader on 1/3 acre in a neighborhood for 16 years until 2020 and found a little over an acre and we are loving it. Hang in there what you are doing, is totally doable on 1/4 acre!
