    i worked my whole life, since I was a child babysitting, working full time during high school and college. When my children were little i worked 1 full time and 1 only on Saturday but when they were older it was more. My degree is in health care then i went back to get the state & national certification in pharmacology and still worked in a hospital. then 5 years ago I was in a accident that was Not my fault but im the one left injured. I broke my back, both my knees and scattered bones here and there. My mother did not cook or bake and if it didn't come out of a box, jar or can only needing to be heated or boiled she didn't feed it to us. I taught myself how to cook and bake simple things and breads but nothing elaborate. Now unable to go to work and my children grown, i started watching videos. I am learning so much from your videos both in the kitchen and in the garden i started. I haven't had one in at least 40 years alongside my dad's. My husband scoffed at my requests for good soil and compost but as we dug up our sweet potatoes and I made him stuffed peppers from those i grew he's changed his mind. Im working on a "stocked" pantry and drying herbs i grew along with some I've never used before. Thank You for showing those of us who didn't have any teachers to show us as we were growing up how. How to grow them, how to use them, how to cook them and how to preserve them. You have brought so much joy to this woman!

    I’m home too. I quit my job during the pandemic to stay at home with my 2 daughters. I worked 17 years as a medical assistant but my husband and I decided for me to stay home. I cook everything from scratch as well. Also during the pandemic my husband got very I’ll and needed surgery, now he working and we decided it would be better for me to stay home. I absolutely love it. I didn’t stay with my daughters in the beginning but now I won’t go back. Our perspective on life really changed. Thanks so much for these recipes.

      It’s a lot of work! People just dont give credit to women who choose to stay at home. I was raised with Mom at home and a Grandma too! It was comforting to know Mom & Grandma we’re home if I got sick at school and had to come home. I noticed my Mom…she was always working, always. It’s a 24/7 job. As I grew, I was able to help my Mom and I loved it. She really was a great women…raised 5 kids, & took care of all of us (8) people in a three bedroom home. The old cliché fits my Mom…she could make a penny scream..😂 and she did!

    I swear this must be a video from God today. This morning I put on some videos about meals on a budget and turned them off because it made me realize why especially poor people are sick and overweight. All the budget friendly meals were filled with mainly beans rice and store bought pasta. And in moderation that would be fine but it was ALL that. And with my families sensitivities and gut issues it’s not possible to eat just that and honestly I don’t prefer so many carbs in my meals. So I am so excited to see you and heathers videos today. Thanks a bunch. God bless.

      I totally get that! In moderation yes, those ingredients are fine but goodness, food is our medicine. Eating well doesn't have to be expensive, I think people just need someone to teach them and show them how. I too deal with a lot of sensitivities so I try to create meals that are customizable!     With the rising cost of food, I tend to buy meats/poultry when they are on for buy one get one free or 1/2 price. I stock up and I never throw out bones. They go back in the freezer for broth stock..

    One of my favorite things to cook is a pork roast with LOTS of vegetables. Then leftovers are turned into pulled pork or a soup with fresh spices, beans and whatever else needs used up. Enchilada casserole is another great use of the leftovers. Remaking the previous leftovers is how centuries of folks survived.
    Please keep this series going- i know many need it.😊

      We do too! I also like to make a pork Ragu over noodles with some of the leftover meat or a paprika sour cream pork (paprikash) over noodles

    I keep a stocked pantry. I truly believe spending the money stocking is so much cheaper than ordering in or constantly going out to eat because there’s nothing at home to eat. I didn’t always love helping my mom or Grandma cook as a child but I’m grateful to them now because I can throw food together without a recipe and feed my family.

    So inspiring! I love frugal/budget meals. I've just made the chicken and dumplings for my family, we love it! Crazy to be eating such a Winter dish in the middle of summer, it's been 41C here in my part of Australia, but it looked so good I couldn't resist! 100% worth the sweat equity 😅 Thank you

    I used up some crusty bread rolls and the end of a cutting loaf yesterday. I sliced them up, buttered them and put the stood up in a dish. I threw in sultanas and some sugar over the top, then mixed a couple of eggs and some milk together, enough to squish the bread into to soak into the bread. I then baked it for 20-30mins on 180/gas 5/ 380?. Bread and butter pudding, delicious way to use up stale bread/ croissants/ brioche etc.

    I loved the meals in this video. Going to try to make bread in bulk. My gardening tip is to check your ph levels when your plant isn’t growing fruit or is struggling. Also dill to fight against earwigs.

    Kelsey, it would never have occurred to me to thaw a whole chicken, reserve specific cuts, then make broth with the rest for (near) immediate consumption plus pick the remaining meat for yet another meal. Broth doesn't always have to be made in quantity for canning. Huh. What an excellent idea! Thank you.

    My Serbian husband would say his ancestors invented cabbage rolls. My Norwegian mother disputes this. Cabbage rolls are a universal favorite. Cabbage roll hot dish is so so great! Thank you for a very sweet and informative video. ❤️

      I did one recently which was very good.. Sauce very similar. However the leaves were wilted and layered like with a lasagna. I think I will shred the cabbage next time. Thank you.

    It is always to be vigiliant with prices as inflation is at its worst, it is the same here in England need to grow more veg next year and flowers. love making bread, i have a stocked Pantry and keep adding to it when their are bargains to be had. xxx

    Azure standard is great for saving money too. I always look at their sale section and see what I can do with that stuff. They have great deals on bulk flour for baking too!

    I love all of the 5 meals that you made. So simple which I like. So many add a lot of ingredients, especially a lot of spice which my husband and I are not fond of. I have all of the ingredients that are listed in your meals. I have not every made any kind of bread.

    I actually keep freezer bags and keep adding scraps for making stock. I haven't tried processing in the canner yet but I put it in canning jars in the freezer. It's the best!

    Great recipe ideas! I haven't purchased meat from the grocery store in ages. I'm just too concerned about what is in it that isn't listed on the label. I buy meat from local butchers and Butcher Box. I feel that making a whole chicken as part of a budget-friendly menu is one of the wisest things I've done. I've also learned how to "part" the chicken and used the bones for bone broth. Thanks for our hard work in putting this together.

    I keep all my veggie scraps (onions, celery & carrots) in a freezer bag and keep it in the freezer for stock.
    Can you eat the pasta and bread because of your health issues?

    How long is broth good for in refrigerator?

      I would use it within 7-10 days or put it in the freezer allowing room for liquid expansion ☺️ it will keep I. The freezer for 6 months

    Great video with some good-looking meals. Idid almost the same think, Kelsey, with chicken broth. I had some breasts on the bone and was going to cut the meat off ( they were huge) and toss the bones into the pot where I was starting some broth. Not thinking, I put the entire piece in the pot. I realized too late. And I don't have 2 young chuldren or a homestead to care for! Oh, well it was delicious in soup.😊

    Here in south Africa we do not use as much minced meat as you people do. What I don't enjoy is so many as your mince recipes have a tomato base.
