When they talk about the toasting process they’re talking about the barrel not the whiskey. When they toast the barrel they fire the inside. And in this case, when the inside of the barrel has been charred/toasted they close off the barrel trapping the heat inside to toast it more rather than leaving the end of the barrel open until cooled.
Except that in toasting a barrel the flame doesn't touch the wood - toasting a barrel is exposing it to heat, while charring is exposing the barrel to flame. Indeed, you can toast a barrel without any flame at all. 🙂
@@WhiskyForBeginners For our French that we use and most other oak they do actually flame the barrell. Depending on the level of toast that you want (low, medium, medium + or heavy) they flame it, spritz it out quickly and repeat to get the desired result.

Probably one of my favorite rye expressions out there - Michter's Toasted Rye Barrel Strength is super tasty (that price tho!), but if you're looking for a cheaper and easier-to-find alternative, RY3 Cask Strength Toasted Barrel Finish is SO GOOD and less than half the price.
I was not ready for how spicy it was. I was expecting the toasted barrel to tone it down and add some different flavors, like it does in the toasted barrel bourbon. Something they do in the second barrel process allows it still to be called kentucky straight rye whiskey also. I forget exactly what the wording is so I don't want to misspeak. All in all, I do like it, but it was much different from what my mind was expecting, so I really had to adjust at first. I was getting borderline astringency and I knew that wasn't correct.
@@noworldforeric Correct. Both barrels that get use are new oak barrels so it doesn’t break any of the rules, much like how a double barreled Bourbon can still be called Bourbon. 👍🏼

So the cap is basically forcing some of the smoke to reabsorb into or coat the barrel wood (which is the phenols they mentioned)? Sounds interesting.

Not a fan of EC rye but maybe I'll have to try this one. I have 16 bottles of EC bourbons, 0 rye's.
I'm not the biggest fan of the regular rye either and I rather liked this one -- smells like opening a bag of honey Teddy Grahams. Haha.
It's been on my radar but hasn't hit the area.
So, in other words, two twigs and three weeks is worth an extra $20 or more a bottle?
