      Vast majority of beef in the philippines isn’t aged or hung. Cooking it “well-done” really is the point were you draw out most water from the beef.

    I remember my Mom whenever I watch Erwan cooking, I see my Mom's cooking techniques to him. My mom was a Cook at Dasma Village in Makati in a rich family. I miss my Mom, 🙏🕊️ wishing she was here and make cooking bondings with her and I will let her watch Erwan cooking episodes for sure she will love it especially the spices Erwan using. Im so thankful I have inherited her cooking skills, she taught me strategies when I was a kid. 💖

    Hi Erwan! You may not be able to read this but I just want you to know that I absolutely loved how my steak was cooked. Followed your instructions by heart. First time making steak and it tasted like straight out from a restaurant. Btw, the steak was bought from Chingolo. Was afraid to cook steaks at home before, might ruin the steak if not cooked properly. Now, we can have steaks at home. Thanks so much ❤️

    1) Heston Blumenthal recommends flipping every 15 secs. Surface will gradually get the char without overcooking the center. 2) sous vide means without air. Remove as much air from the bag. Using a cooler and adding hot water will make control easier. Anova or Joule is worth it. Fast sear 2 mins per side on hot pan 3) tip number one, above all, get good meat

    For diy sous vide it’s much easier to do it in a closed cooler. Just bring water to a boil/simmer and let cook to your desired temp. Check temps every half hour or so.

    love this!! I use a ~1.5 in thick filet mignon and let it sit out with a little soy sauce... pat it dry and add salt and pepper then pan sear like you describe for 3-3.5 mins per side. rest it for as long as it was in the pan and usually serve it with some sort of potato and green and red wine :) dog loves steak night too

    I'm a big fan of steak. Sous vide works really well but I recommend using real sous vide not a diy one. Then grill it after. Delicous! 😋👍 like your vids.

    You're not fond of grilling them? man!!!!!!!!!!!!! you're missin' so much... They're the best when they're being grilled. Well, to me they just tastes way better than pan frying it or on a cast iron. Sa bagay, iba-iba naman tayo. You have your favs. But I enjoyed ur video. Makes me want to go costco tomorrow and buy some for dinner. Drooling sa sarap!!!

    Pan seared rib eye steak has always been my favorite. Very easy and the quickest heavy meal to cook yet delicious. Medium well would by my suggestion for pinoys as rare to medium is "hilaw"

    When I grill steak I'm from the school of thought of not flipping the steak repeatedly. When grilling 1-inch thick ribeye steak I just salt it with kosher salt, sometimes garlic salt, when I take it out of the fridge and let it sit on the kitchen counter for 45-60 minutes. Once ready, I would light up my gas grill (mine had a searing section) and keep the flame on high setting while keeping the cover down and heat up for 5 minutes. Once heated up I would put my ribeyes on the grill over the searing section and put the lid/cover down. For 1-inch thick ribeyes I would time 3-4 minutes before opening the lid and turning over the steak. I resist the urge to open the lid when heavy smoke is coming out signaling that there is grease fire. I do not douse off this grease fire. This would give the steak a very nice char and taste from the Maillard reaction. The smoke would give the steak that smoky flavor that you would not get from pan frying or roasting in the oven. After 3-4 minutes I would flip over the steak and repeat the same process for 3-4 minutes. Grease fire is your friend in grilling steak. Don't be afraid of it as long as you keep the cover down. Once the time is up I just remove the steak and let it sit on the table to cool for about 10-12 minutes before cutting or eating. Never fails to give me a tasty, smoky flavored medium rare ribeye steak.

      He is good but don't get me wrong, being a professional chef is different, its about mastering recipes, knowing and understanding ingredients and being consistent all the time. Also you cook food not just for one portion, you cook for about 200-500 people or more everyday specially if you work in a hotel banquet or a busy all day dining restaurants. Its a different world when you work on a professional kitchen and its tough and fun at the same time.
