I have latkas as my go to breakfast many days of the week. I love them with tzatziki sauce too when I have fresh cucumbers in my garden. My secret ingredient is good paprika.
Hey, Jeff. Happy Chanukah from the other side of The Pond. You've got your history mixed up, by the way! The Macabis didn't burn the oil for heat (what, in Jerusalem?). The temple was ransacked and there was only enough oil to burn the sacred light (which must never go out) for only 1 day yet it would take 8 days to get more brought over. The oil didn't just burn for the 1 day - it lasted for the full 8 days until the new oil arrived. The reason why you start with one candle and peak at 8 is because the miracle grew with each passing day. 2 days, you could say you miscalculated the amount of oil you had. By 6 days you would have known something special was going on - but 8 days? There's no way the oil could have lasted for the full 8 days, hence the size of the miracle. :) We have never made potato latkes: my mum makes latkes often, but using up the flour, egg and matzomeal left over from coating the fish when she's made fried fish. That's a very different kind of 'pancake'. My younger brother sometimes makes giant ones (the whole base of the frying pan)! I keep meaning to try them myself, but have never got round to it. Any chance of more 'kosher' meals from you? I only discovered your site a few months ago. Keep up the good work.

I’ve listened & watched everyone from Martha Stewart oo up and I mean up to you and hands down yours looked the best by far , thanks for your recipe I only have one wish and that’s that you come to my home and cook them for me (I’ll supply all ingredients including the apple sauce) Thanks 🤩
I think you would have got more liquid out of the potatoes if using a muslin cloth, I put my latkes in egg poaching rings in the oil pan, you don't get so many loose bits of potato floating about in the oil as you make batches of latkes. I love to change up the seasonings too, try with nutmeg or zaatar or curry powder, plus sometimes add grated cheese or courgette or sweet potato. Worth investing in a food mixer with a grating attachment if you have a big family, saves time!
I am thinking I will use my Kitchenaid Food Processor to grate ( save my knuckles) and cheesecloth to squeeze the potatoes ( I really do not need the added fiber of the paper towel in mine, Thanks. Great recipe!!!!

Except for the addition of the baking soda and spices, this is the identical recipe I've been using for 10 years (the collection of starch that gathers on the bottom of the bowl included). Got it from Chris Kimball. They're a hit every single year, and everyone demands I make them. Though I use the food processor's grater attachment :-)
Looks very similar to Alton Brown's latkes. My mom uses an ancient recipe, I think from Five Roses flour cookbook, or Betty Crocker? Even more basic than yours, but so yummy. A rare treat now as it's too high in carbs (and vegetable oil is horrible). I've really been craving some lately though!
Jeff, can you do some sort of spaghetti with Marinara and sausages or meat balls. Also I’ve never seen you do chicken parts in the instant pot. Any chance you could do these or lead me to a recipe in your cook book that I love.
You know what we do is we use frozen hashbrowns, which is just grated potatoes, thaw them, dry them and we add either flour or the best which is a little pancake mix or bisquick to it, we also do grated onion and eggs. I love your shirt !!!

Growing up my Mom said Italian Potato Pancakes. Left over mashed potatoes with egg, bread crumbs, Parmesan cheese, salt & pepper. Make them into little pancakes and fry it up. Always thought they were made that way until I was older and had Jewish friends. Ha Ha.
Despite living in Idaho, I'm not a big fan of potatoes.🤫 But these look and Sound amazing! 🤤 You might want to use a flour sack towel to squeeze out the taters though. ☺️ Happy Hanukkah!💜
My Dad used a wire grater for the potatoes. I don't think he added anything except salt and pepper maybe. And he made them thin!! He'd crank out silver dollar pancake sized latkes a bunch at a time in one pan. A Chanukah dinner might just be a plate of latkes and apple sauce!!
Very nice....but a friendly suggestion.....strain the Latkes on a wire rack over (not directly on) paper towels. Won't bore you with the technical reasons why, but you can look it up.
I made these last week, but I left out the ginger (sorry, too weird). The matzo meal didn't quite bind it enough, so I resorted to my secret ingredient -- cornstarch! I heated the oil to 350 (which was fine, it was starting to smoke at that temperature) and they came out great.
Remember, as mentioned in the recipe and video, you must use that starchy paste reserved in the bowl after squeezing the potatoes. That combined with the matzo meal makes the perfect bind. That said, cornstarch can always help if you need it to!
That was my thought.... The pressure cooker could make pastrami or brisket the day before so they could be eaten together... MMMMMMMMMMMM! (Although, I'm not Jewish or Kosher so I get away with sour cream on my latkes and eating beef at the same time. xo)

I invented this by playing around trying to make hash browns. This is almost exactly how I do it. I didn't know that they were already a thing.
