    Ingredients:
    7lb pernil (feeds 8-10 people)
    6 limes (juice)
    6 whole garlic cloves
    4 minced garlic cloves
    4 tbsp sofrito
    4 yellow seasoning packets
    2 tbsp salt
    2 tbsp soy sauce
    3 tbsp ground oregano
    a long, sharp knife
    Reynolds oven bags (disposable roasting bags)

    This was beyond the best pernil recipe I’ve ever tasted love love love this my mom loved it my little brothers girl said it taste like a restaurant pernil and we are never going back!!

    Thank you so much for the recipe. This was top tier! I made it yesterday for Thanksgiving and it was delicious. I used a slightly bigger pernil (8.5lbs) and adjusted the seasonings. (8 whole garlic, 5.5 tbs of adobo, 4.5tbs of oregano and 5tbs of soy sauce)

    Putting the scissors to it, and arranging the crisps with the lime presents so well. Gave me a flashback and mouth water! We didn’t use limes, but everything else including the homemade sofrito. This was a classic Sunday dinner, with greens, rice and peas and Mac n cheese and corn bread. Kinda like Spanish soul food.

    I season both the turkey and pernil following your instructions and I keep being told that this year it wS the best tasting turkey and pernil. The leftover taste even better. Thanks !!!

    Love the recipe. Did it with your sofrito recipe and it came out great! I made it with my Sous Vide and left cooking for 24 hours. After I took it out of the bag and torched the skin with my flame thrower. Highly recommend getting a sous vide.

    Your recipe looks amazing and I marinated the pork shoulder according to your recipes but my problem is I can not find the oven bag in my local supermarket and it would be too late now to order it online for it to arrive on time. Would you have the cooking time and temperature for cooking without the oven bag?

      @@BigMamaCooks The flavor was amazing. Tasted better than a lot of restaurants I had. Unfortunately I wasn't able to get the oven bag so I roasted at 350 degree covered for 4 hours, then up it to 450 degree uncovered for 40 mins to crisp the skin. Thank you for sharing your recipe. This is one of the best pernil I ever had. Delicious!

    If I’m making a bigger pernil. How long should it be cooked. It’s about 11 lbs. How do you determine the cooking time based on lbs?

      Hey cousin, I refrigerate the pernil for marinating. I've frozen it before but the seasoning waters down and the flavor isn't as savory.

      Your stove knob should read boil. Turn it all the way until you can't turn anymore

    The marinade was watery when I made it. I added 6 limes juices. Was it supposed to be like that? I did everything else right. Letting it sit for 3 days.

      She might have added too much but you need some in there trust me if I had to guess with my measurements I would probably go with 2-3 limes. Small ones. Some people get so large ones. But with the sofrito and garlic etc the lime adds flavor. Haven’t tried soy sauce tho.
