    Here you did all this fine work on your pizza oven. All i did was pull out my Webber Kettle flip the grate over, fired it up! Made a 18" pizza in a pizza pan 10 min was eating YUMMY Love the smoke Mesquite Wood flavor

    Excellent professional job. Suggestion. Cut the stone in smaller tiles, so it can follow the heat deformation 7:10 of the metal base.

    Awesome job! If I were you, I would make it more oval ontop and pack it with insulation, and lay thicker bricks on the surface!

    I was going to build one out of cement. but i looked around on my patio, 👀There set a Weber Kettle and a offset smoker. SO I BACK OUT OF IT > I used pizza pans for my kitchen oven as well . Once these pizza pans are season, they will last for ever. I stand them up next to the stove top wall to display them, and easy to get. There pretty! Easy to used for other things. Like cutting meats on them, and use for a serving trays and things. Cooking biscuits in ect.

    Looks great and looks like it would be easy to hook up a propane on the side instead of using wood . You're constantly adding wood to stay on top of that heat 750' F and up. Ooni's oven aren't insulated except their last one. The bottom of the door should have been level to the stone and it should have a 4" metal overlap outside for easy rotating of the pizzas.

      @@customfabricated5687 i'm sure if you dropped that stone down and kitted the whole floor with stone the metal wouldn't warp, we built a large Grill/fire pit for burning large logs and we had to go to 8mm for the plate to stop it warping.

    I’m part way through making one, got stumped on what to use for bricks as I was trying to replicate one of the larger dome designs. Have two shells already made, but it’s a lot of work lol.

    Very nice! You’re a kindred spirit! Speaking as a retired fabricator myself, I would be making one like yours if I had a shop to use. I made a coffee drum roaster which incorporates similar fabrication. I put a video of the completed project on my channel.

    You need pizza stone risers on the floor so the stone heats from the under side aswell.

    Dude! I’m in awe, you’re an artist!!! If you decide to sell the CAD plans, please let me know. I’m Canada so importing one of these puppies would be a costly duties tax endeavour. A local shop with a plasma cutter might be able to cut and bend the pieces for me and i could weld it together. In any case, thank you for posting, i’m now subscribed. Love your work man!!!

    Very nice build. I wish I had just half of your equipment and skill. With all the precision metal work, I'm very surprised that the pizza stone floor didn't align better.

      Thanks! The steel floor ended up warping slightly. For the next version, I plan to beef up the thickness there and might also add some bracing

      @@customfabricated5687 Thanks for the reply. Most wood fired full size brick pizza ovens are large. This is to have enough heat reservoir in the surrounding fire brick. It also allowed us to build fires out of larger pieces of wood. One mostly keeps the pizza 8 -12 inches away from the burning wood since one has the luxury of space. This all changes when we want a smaller, often portable option. That is why the modern stainless steel ovens often uses a flame guard to prevent burning of the crust at the closer cramped distances. Ideally the smaller wood ovens should be more rectangular vs square so that the fire could be made either in the back or to the side of the cooking spot. This will also allow one to get the pizza a few more inches away from the burning wood. The other option one has is to go to propane. A narrow linear burner really improves the utility of the oven. One no longer has to baby-sit the wood fire every 15 to 20 minutes and focus more on guests and beverages. One also gets a hotter oven temperature to heat the brick floor to 825 degrees. It is much cleaner without all the ash and soot. One might argue that the wood imparts a smoky flavor or aroma, but I would have to disagree. 60 to 90 seconds of wood flame really doesn't affect the taste at all. I envy your shop and building skills, but if you were to make another oven, just make it 6 to 8 inches longer or wider, and preheat with gas. Mine burns wood and gas simultaneously so I get the best of both worlds. I toss in wood chips only when baking a pie. I can't wait to see more videos. Good luck.

      Thanks! I also build smoker pits and I use a similar thickness of metal for those as well. The thicker material works well for heat retention

    very nice build and nicely equipped shop . Looks like a carbon steel build , what lifespan do you give it ? I find carbon steel is great for smokers but the high temp of a Naples style pizza oven destroyed my oven in short order. Now I'm building one with 12 gauge 304 stainless.

      Thanks! Yes it is carbon steel and has held up just fine for me so far. No significant corrosion yet. At this rate I expect it to last many years (we’ll over 10+)

    I happened to get a monster piece of square tubing (18"x6" - 3/8" thick) I was thinking of making an oven out of, wasn't going to bother insulating it with the steel being that thick. My question is about the stone, do you need a stone or can you just throw it right on the steel (provided it's been cleaned and seasoned)?

    I would like to build one but with the shape of an italian steel oven like EDIL PLANET or CLEMENTI, ALFA ... The question is : i can't solder stainless, so i have to use normal steel, which thickness is the minimum to avoid deformation and to get many years of service ?

    the oven is great , bud you need to understand abaut the temperature you need to reach for top and buttom to bake the perfect pizzas , the stone need to have 300 the buttom 400 ,grad celcius - not farenheit

    What type of ceramic fiber did you use for this oven? And does it melt during the heating process? Thankyou

      I used 1in thick ceramic fiber that’s rated to 2300F. It does not melt at all during use of this oven

    the fact with all oven builders , is that they dont know how to bake the perfect pizza with the perfect Temperature , the stone is to hot , it wil burn the pizza buttom before it wil be finish baked on top ,2 . if the pizza dough is to havy , then its better to bake the pizza with 330-350 grad celcius , only 220-360 g pizza dough can bakes with high temperature
