    Delicious. We used to have these in Cyprus. We called them Eliopita. I guess because they were bigger. PS I so much love your background music, especially the start-up music.

    I will make the Feta version coming weekend. Also thinking of spinach, feta with the basic mix of onions, olives...Maybe also the basic mix with canned tuna flakes would be nice.

    Do you rinse your feta before using in a recipe? Depending on the kind of feta (i.e., Bulgarian, etc) I generally pour olive oil when serving as an appetizer- just asking...

    Any make ahead tips? I have a party coming up and would like to prep some of the goodies in advance. BTW, I'm using 3 of your recipes for this party.

      This recipe tastes best baked fresh however here are some make ahead tips that will work:
      The dough can be made ahead and refrigerated overnight for a cold slow rise. The filling can also be made ahead of time and refrigerated.
      Assemble the pies the day you will be serving them and bake :)
      Enjoy and have fun with your guests!!

    Hi , Dimitria , some chefs said don’t put the salt over the yeast because it will kill the yeast so which one is the right one to put the salt over the yeast or over the flour , please let me know , thank you so much and happy new year.

      Hi Laila, I think that I accidentally called the sugar salt… sorry about that. I never put the salt over the yeast because I too have heard that it kills the yeast. I always add the salt to the flour… hope that helps ☺️
