Thanks for validating the secret Maggi sauce. I knew I wasn't crazy! I use the "Hot and Sweet Tomato Chilli Sauce" variety (since Maggi Chilli Sauce isn't sold in India). It seems like the Indian rendition of Sriracha sauce to me. Btw, are we ever gonna see your Tandoori Masala powder recipe or is it already out there?
Looks great Romain. Can I ask two questions please? 1. Why do you say 'don't use non-stick pans?'? 2. When in your recipes you write '1 1/2 teaspoons, do you mean half a teaspoon or one and a half teaspoons? Many thanks, Chris
Non-stick resists the browning you want (Maillard reaction) when you are frying. It's not impossible to make a curry with non-stick - just harder. Think browning a steak... One and one half teaspoons.

Would it be ok to use another decent brand off masala sauce other than Maggies? Or does this have a superior flavour?
I can't answer that without tasting the brand you choose I'm afraid. If you find one with a similar flavour profile I'm sure it will be fine.
