I saw this recipe, bookmarked it, and made this last night. Before I knew it 2 pieces had gone in my mouth and today's leftovers disappeared. It was so yummy. More than a hit. The proof is it vanished! I did add a vanilla bean instead of the extract. I make my own extract from bean hulls and dole it out to friends but it has to sit and cure for 3 months prior to use.
Hi there, apologies for the delay in responding. You can substitute coconut flakes with coconut extract or coconut milk powder. Depending on your taste, you can try to leave the coconut out and see if it makes a big difference. Good to try alternatives. Hope this helps.
If you do not have vanilla extract, then you can leave it out. The extract are concentrated flavours, so if you use almond, it will have a slight almond flavour/taste to the cake. You can try it and see how it turns out 😀
I used a Pyrex 28x 28cm. For this recipe, a bigger and deeper dish is better, so the sugar batter at the end does not overflow whilst cooking. Hope this helps 🙂
Hi there, If your pears are much smaller than use 4. I wouldn't use more than 3 medium or 4 small ones, otherwise the consistency will change. Be sure to use the ripe and sweet pears for a good result 👍 Hope that helps 😀

I made it but when I put it in the oven it never turned golden on top at a half hour being in it’s just dry batter
It should be taken out half way, then poor over the butter n sugar syrup and return to the oven for the top to be caramelised and start to brown?

Can i make a double batch and bake it in a 13x9 inch glass pan? Cook it longer??
If I am honest, I really am not sure how it will turn out. I guess the only way to find out is to try and see the outcome.
What is that that you rubbed inside the rim of the bowl???
It's a small amount of butter. I find it helps not to stick too much around the edges and also gives that extra caramelised result.

Use Frying pan can or not
I have never tried making it in a frying pan, but you can try and see how it turns out. I would recommend an oven safe baking dish.
