Finally!!!! I found a hoagie recipe that actually worked, and it wasn’t really heavy and like a brick. Used 1 1/2 cups of all purpose flour and one and a half cups of bread flour. Came out perfect thank you so much. You are a blessing!
this recipe is perfect! I made the dough in my bread machine and added 1 tbsp wheat gluten powder. I also used your suggestion of 1.5 cups of bread flour + 1.5 cups AP flour. They came out so beautiful!
I made these today and they are incredible! I am planning on using this base for making my hotdog rolls & hamburger buns, I did read through the comments and decided to do a 50/50 bread flour & AP Flour and I was not disappointed! Thanks so much, you deserve all the praise! 👏🏽

This is a roughly 70% hydration loaf of enriched bread. It's also the best hoggie recipe I've found that doesn't contain ingredients that are near impossible to find. Thank you and fuck diastatic malt powder.

When using instant active yeast, you should mix it with the other dry ingredients, then add the liquids. This is the whole reason for using *Instant* yeast. Read the instructions on the package. I have followed this method for 40 years without fail. Keep yeast under refrigeration or frozen and it will last for years, so there should be no need to test it.
I am making these today. The dough is rising. I am going to make small hoagie rolls for our needs 😊 I come from the Philly area where the hoagie roll originated. Yes, I am name dropping 😅 We live in De. now. They call their rolls "Sub"rolls.. This recipe looks great!! Can't wait to see how they come out 🙂 ty.

Everything was going great. The mixing was perfect. the first rise was perfect. and the second rise when they were shaped just didn't happen!!?? Don't know why. I've had this problem before and don't know why. Any help??

I think I used the wrong oven setting. Mine took like 30mins to bake and never really browned up. Otherwise the family said they were good. I'll definitely be making these again tomorrow to try and perfect the recipe.
I can assure you these wont be like what you get in a sub shop. Your recipe would work if you steamed the buns first in a pressure cooker, then removed and baked until golden. How do I know they use high pressure stream? Because Im the one that services the industrial bakeries' boilers😂. I tried it at home in my pressure cooker and it produces basically the exact rolls you get at the best shops. Also, if you do the process correctly you can make banh mi rolls _exactly_ like what you get at the vietnamese places🤷🏼♀️
