Thank you so much. All your instructions are perfect. Today is the first time I have successfully completed a baguette. My gas oven was a bit weak so I had to increase the baking temperature to 450 degrees Fahrenheit and bake for 10 minutes. In the past, many TH-camrs gave incorrect instructions on making baguettes; so I had to throw away a lot of ingredients, especially wasting too much time. Once again, I sincerely thank you for your detailed and precise baking instructions. I wish you and your family good health and happiness. I baked two loaves of baguettes.

Follow-up: I’ve made these four or five times now, and each time gets easier and with a better result. Ok, I'm back after a year, just to say, how much I have been enjoying this recipe. I make these baguettes at least once a week, sometimes more. If we have extra, we share with an older couple across the street from us. I've also tried some slight adjustments, I add a teaspoon of garlic powder and a tablespoon of Italian mixed herbs to the flour before mixing, that makes an amazing aroma and an amazing loaf of bread.

I give my yeast honey. Its a nice flavour and the yeast goes nuts. I also use fresh yeast, I absolutely love it and although it's not necessary, I like the smell. You can get it from supermarket bakers just by asking, or small grocer shops etc. You can even keep it going like sourdough and have infinite yeast Love johns recipes they're so easy to follow. Just made a batch this afternoon. Instead of 4 oversized loaves, I split the dough into 6 loaves, added an egg wash to them and sprinkled pretzel salt and roasted garlic before baking. Turned out absolutely wonderful…crispy outside, soft inside. Great recipe John.
Hi John, I used these trays but each time the bottom of my baguettes get stuck on the tray. I usually line it with parchment paper but that defeats the purpose of the intent of the honed right ? Can you please advise ? Thanks.

Had to laugh when I saw you and I have the exact same equipment..red mixer, baguette baking pan, and scrapers. I am an American who lived in Europe many years and after I came home, I totally converted to the metric system, and cooking by weight. It really helps. I love your cooker!

I did your baguettes last week, and family was over the moon. Could you do a plaited bread for us? Also, is there any seeded bread that I could make which doesn’t need the wok? John Kirkwood is good, bloody good. No question about that. This selling stuff on TH-cam isn't new, nor is it something only John does. I've been learning from his videos even before he has been asked to endorse or sell stuff. In fact, in his French Baguette video, he actually says a cloth with flour sprinkled on it, as a a couche is better, and a lot cheaper than a mould, which here uses here. What's wrong with doing that? He still concentrates on the recipe. All through. The shower cap is another example. He still calls it a shower cap, he's always used it instead of anything else. John Kirkwood is kosher, and bloody good.

Being a Yank from Philadelphia, the quest for a proper home-make baguette has been eternal - this is the actual solution. Thank you. Oh. Side note. We switched to grams a few years ago, when I started baking continuously and as a proper hobby. You’re absolutely spot on. Grams are better. This also works with a bread machine, on a pizza setting to pull it all together, when it’s done, it’s kneaded and proved.

Great instructions, easy to follow - and I got an OK result from my first attempt. But the baking took a long time, 26 minutes or more at 200C to get colour on the crust and hard bases on the subs - next time I'll try fan cooking rather than conventional baking. And before then, time to buy a baguette tray!

Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. John, as always, your recipe is fab and easy to follow. Your recipes are the easiest to follow and execute 🙏🏼👊🏼👏🏼 I know you already have a whole wheat baguette, but could I ask for a whole wheat baguette with grains in the dough recipe? Something like a multi-grain baguette/sub-baguette.
Just experiment by adding a few grains Wolfi, it's not going to ruin anything, just keep the rest of recipe the same, start with a 100g as a test. just mix them in at the start with the flour. if it doesn't work it's not the end of the world, just a few ingredients and bit of time. Thank you for this great video, everything was clear & well explained and so easy to follow, and I especially love the inclusion of grams for every ingredient. This high quality, and the fact you seem to try and reply to every comment you are able to even months later, speaks volumes about your passion & dedication to your craft and sharing it with others. I made an attempt at making rolls based these yesterday, aside from some custard filled buns early in the year this was my first time ever baking any kind of bread. Since I have to watch my blood sugar I swapped out the refined white flour for 50% wholegrain white flour and 50% wholegrain spelt flour, the rolls came out denser and smaller in girth than I was hoping but otherwise still usable and very tasty. I did adjust the amount water with an extra 100-150 ml (not exactly sure how much since I only thought to add it after I started mixing the dough), I'm not sure if this is an appropriate hydration ratio for wholegrain and spelt flour but the dough seemed to come out good after 10 minutes in the mixer. The packets of yeast I had on hand were also on the older side, were best before April 2021, so I added a bit more of it (and sugar) to compensate which seemed to proof alright and the dough had risen good after 60 minutes of sitting in the oven with the light on though I did leave it rise for an extra 15 minutes before taking it out. The shaping went smooth, unfortunately after letting rise on the bench for 45 minutes they hadn't risen much at all (the kitchen had cooled off due to air conditioner in the adjacent lounge room to combat a hot Australian summer day) and even another 15 or so minutes in the oven under the light didn't help too much. Speaking of the oven I believe I had the temperature set too high during the baking, I had to set it to 200 C but forgot to adjust due to being a fan-forced oven. All in all I am happy with my results, like I said they're still tasty and good to eat despite being denser and smaller than I wanted and the best part is they didn't spike my blood sugar. I'll definitely have to do some more research and experimentation with using 100% wholegrain flours and incorporating spelt, already looking at your "100% whole wheat sandwich rolls" as my next test. Again thanks for the wonderful video!

This is the third of your recipes that you've taught me, John, and I am so appreciative. With each bake I am becoming better at it and growing in confidence. When I go to cook, which is several times a week, I pull up your videos, hit play and go back and forth from my kitchen to living room, ensuring that I am doing what you are doing. My gas oven was a bit weak so I had to increase the baking temperature to 450 degrees Fahrenheit and bake for 10 minutes. In the past, many TH-camrs gave incorrect instructions on making baguettes; so I had to throw away a lot of ingredients, especially wasting too much time. Ok, I'm back after a year, just to say, how much I have been enjoying this recipe. I make these baguettes at least once a week, sometimes more. If we have extra, we share with an older couple across the street from us. I've also tried some slight adjustments, I add a teaspoon of garlic powder and a tablespoon of Italian mixed herbs to the flour before mixing, that makes an amazing aroma and an amazing loaf of bread.

I give my yeast honey. Its a nice flavour and the yeast goes nuts.
I also use fresh yeast, I absolutely love it and although it's not necessary, I like the smell. You can get it from supermarket bakers just by asking, or small grocer shops etc.
You can even keep it going like sourdough and have infinite yeast

Just made a batch this afternoon. Instead of 4 oversized loaves, I split the dough into 6 loaves, added an egg wash to them and sprinkled pretzel salt and roasted garlic before baking. Turned out absolutely wonderful…crispy outside, soft inside. Great recipe John.

John Kirkwood is good, bloody good. No question about that. This selling stuff on TH-cam isn't new, nor is it something only John does. I've been learning from his videos even before he has been asked to endorse or sell stuff. In fact, in his French Baguette video, he actually says a cloth with flour sprinkled on it, as a a couche is better, and a lot cheaper than a mould, which here uses here. What's wrong with doing that? He still concentrates on the recipe. All through. The shower cap is another example. He still calls it a shower cap, he's always used it instead of anything else.
John Kirkwood is kosher, and bloody good.

Oh. Side note. We switched to grams a few years ago, when I started baking continuously and as a proper hobby. You’re absolutely spot on. Grams are better.
This also works with a bread machine, on a pizza setting to pull it all together, when it’s done, it’s kneaded and proved.

Great instructions, easy to follow - and I got an OK result from my first attempt.
But the baking took a long time, 26 minutes or more at 200C to get colour on the crust and hard bases on the subs - next time I'll try fan cooking rather than conventional baking.
And before then, time to buy a baguette tray!

Just a little extra information to help you along if you do try these baguettes.
Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help.
1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here th-cam.com/video/HWpSbYV96_c/w-d-xo.html

I know you already have a whole wheat baguette, but could I ask for a whole wheat baguette with grains in the dough recipe? Something like a multi-grain baguette/sub-baguette.
Just experiment by adding a few grains Wolfi, it's not going to ruin anything, just keep the rest of recipe the same, start with a 100g as a test. just mix them in at the start with the flour. if it doesn't work it's not the end of the world, just a few ingredients and bit of time. I made an attempt at making rolls based these yesterday, aside from some custard filled buns early in the year this was my first time ever baking any kind of bread. Since I have to watch my blood sugar I swapped out the refined white flour for 50% wholegrain white flour and 50% wholegrain spelt flour, the rolls came out denser and smaller in girth than I was hoping but otherwise still usable and very tasty. I did adjust the amount water with an extra 100-150 ml (not exactly sure how much since I only thought to add it after I started mixing the dough), I'm not sure if this is an appropriate hydration ratio for wholegrain and spelt flour but the dough seemed to come out good after 10 minutes in the mixer. The packets of yeast I had on hand were also on the older side, were best before April 2021, so I added a bit more of it (and sugar) to compensate which seemed to proof alright and the dough had risen good after 60 minutes of sitting in the oven with the light on though I did leave it rise for an extra 15 minutes before taking it out. The shaping went smooth, unfortunately after letting rise on the bench for 45 minutes they hadn't risen much at all (the kitchen had cooled off due to air conditioner in the adjacent lounge room to combat a hot Australian summer day) and even another 15 or so minutes in the oven under the light didn't help too much. Speaking of the oven I believe I had the temperature set too high during the baking, I had to set it to 200 C but forgot to adjust due to being a fan-forced oven. All in all I am happy with my results, like I said they're still tasty and good to eat despite being denser and smaller than I wanted and the best part is they didn't spike my blood sugar. I'll definitely have to do some more research and experimentation with using 100% wholegrain flours and incorporating spelt, already looking at your "100% whole wheat sandwich rolls" as my next test. Just a little extra information to help you along if you do try these baguettes.
Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help.
1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here th-cam.com/video/HWpSbYV96_c/w-d-xo.html
