    As someone that has spent 30 years in the restaurant industry I have never been a fan of the "annual gimmicky pans". I prefer All-Clad professional cookware. However, my sister bought me the two pan set for Christmas and I'll be honest... I wasn't in any hurry to use them. In fact they hung on my pot rack for 3 months before I used them and.... well i was impressed. If cooked well, had a good sear on the meat and then it cleaned up so easily... Ok, so now I will actually use it more than my other pans... It is actually very good...

I did want to get a new one because I don't like looking at the scratches but since nothing really sticks to it, it's not really necessary.

    After watching your first review for Granitestone pan, I got mine in December and L❤VE it! Even cooking a pork tenderloin in the oven worked well. The only problems I had with the pan is when I do cook something in the oven and there's sauce that splatters and gets on the handle. The handle is hard to clean. My solution...I cover the handle with foil.

    Loved the original. My partner burned it on high heat then used strong abrasive and that finished the non stick in the areas where it burned.
    I went back to bed, bath, and beyond, but they stopped carrying it and only had a smaller one. I found the old size at Home Depot online at a great price and ordered two. THEY ARE GREAT.
    I have no need for another one right now but I'll see if I can find 1 to buy anyway.
    This is the BEST, EASIEST TO USE AND CLEAN PAN I HAVE EVER SEEN.
    I never would have known about this but for your show, so I thank you for simple information that makes one aspect of my life easier. That matters.

    I guess the nonstick has its advantages and disadvantages.as professional chefs rely on some of the food sticking on a bottom of the pan so we can use the fond for making pan sauces cuz that's where all the flavor is

    • @timlaunyc
      @timlaunyc 4 ปีที่แล้ว +6

      You can take cast iron and stainless to well past 400F and expose the cooking surface to flame without issues. High temperatures and open flame will degrade non-stick surfaces.

    • @Pallepop909
      @Pallepop909 4 ปีที่แล้ว +2

      Most professional chefs honestly wont make pan sauce. You make a fond way before you cook the food. Never heard of an actual chef make pan sauce. Just beat up some vegetable and big meaty bones in the oven until proper brown and boil that.

      @@goldfinch102 No chems like Teflon at all so it is safe to use. Seasoning the pan is done to help fill pores to help with the cooking process. I do this each time I need to use soap on the pan, but I mostly wipe out the pan with hot water so that the oil seasoning remains. I do this with my cast iron skillet.

    Every time a new non stick pan comes out I'll buy it usually because the last pan I bought is no longer non stick. However I bought a Granitestone pan and they are really as good as they claim. I spent 15 years in the Pub/Restaurant business and I'm very impressed with this pan.

    I love the Hexaclad for its even cooking and quick heating. Have had my pans for over a year and love them. They are not completely non-stick, but i would rather not have all those sprayed on non-stick coatings on my pans anyway. very durable. Cook with the lid that has a small air valve. does a great job. Test your pan with large amount of food. The Hexaclad retains its heat which is important for recipes. Cheaper pans do not do well here. No warping.

A shout out to Zach for being so prompt with his reply and quick attention to correcting my email mistake. A shout out to GranitStone for making such a high quality product, and a shout out to you for being "so tough" of a critic. The 1st Gen. Type Pan with this configuration stone coating came out in the nineties one key feature is that it's not flat it's a porous surface it's got peaks and valleys so the food is actually cooking on top of the peaks therefore you have air getting in between these valleys and there's virtually no way for it to stick that's what makes it a very very good Pan

Here's the scoop, I received the small (5" ?) pan with the set. The recipe I was following said to wipe the pan out before the next step. There was a plastic potatoe bag in the can and, wouldn't you know it! The bag glomped on to the pan! Here's the freakin' part, with just a little elbow grease and a plastic ruler edge, all the plastic came off! (I am arthritic, so my elbow is not very greasy, either.) The Ballarini pans I've seen are double the price of the granitestone. $60 for one pan plus shipping not 2 and free shipping plus there are discount codes from the company and James. Also for whatever reason, I haven't seen them in the states only Canada to avoid shipping though to be fair I haven't looked many places.

      @@kennethcraig8656 That makes sense as I am in Canada and can't find a Canadian link for the GraniteStone Pro, but the GranitStone 12" is $43 CAD and the Ballarini Bologna 9.5" can be bought for $45 CAD on Amazon, or about $33 USD so I thought it was a good comparison. Maybe Ballarini is a better buy for Canadians at the moment.
      Edit: the 12.5" Ballarini Bologna is $65, maybe it's not comparable after all!

    Like so many others have said... used your discount code to buy the pans. Always been a fan of calphalon nonstick, but they seem to have long term durability issues (at least in my household) Thanks for being an honest review.

    I’ve gotten other nonstick cookware that said not to fry anything above medium heat. The website doesn’t say anything, but since this can go up 550F in the oven, do the instructions say that you can fry/sauté on high heat too? Only being able to fry at medium heat or lower is absolutely a deal breaker for me.

    Picked up the Graniterock after watching your original video. Was in the market for a new pan and it was well under what I was expecting to pay. It is my daily driver and will continue to be - and I cook in it at least 4 times a week. Worked so well I got my mother to grab one, though it was called the Granitestone at that point. Now it is her go to pan as well.
    Only drawback to the original was the inability to be used on induction cooktops. So this is definitely on my Xmas list now.

    I think they should have more information about the precooking hot oil seasoning, and if it's not done correctly and about every 3 to 4 months, the pans will fail. And whatever you try to cook, will definitely stick and be ruined.
    If I only save one pan in this world, my job was done perfectly.

    Hi! Listen I have an instant pot that I ADORE and use for everything (pressure cooking is the best). The only drawback is that it doesnt crisp or brown obviously. I saw yesterday that they have now come out with an instant pot air fryer combo that is supposed to "replace everything in your kitchen". It has interchangeable lids for pressure cooking and air frying. My finger is hovering over the add to cart button but I would love to see it put to the test first. Anyone else?

  • @EchoSigma6

    This looks like a fine pan for my kids since they fry eggs, breakfast meats, or warm things up on the skillet. I think for dinner meals with thicker meat portions, the cast iron or carbon steel pans are ideal since they are extremely heat tolerant for searing.

  • @cashmanmoney

    I don't know if they are against using acids to help clean them, but soaking in lemon juice or vinegar will help lift the stuck food. another option is to boil water in the pan.

  • @estoylaroca
    @estoylaroca 4 ปีที่แล้ว

    I think what's also important is how the pan holds heat.
    If the newer one has a thicker bottom, then it probably holds heat better than the original. Good thing for when you're cooking steak etc. which soaks up the heat very fast... and is quite literally the difference between having a good crust steak, or a boiled looking steak.

      I've got those too, a 10- and a 12-inch. They are great pans. They are probably very similar to the Granite Stone pans, but I think the cooking surface is smoother on the Michelangelo pans. I wish they had an 8-inch or a 6-inch size.

    I have had the Granitestone for about 2 years and it is much browner on the bottom than yours but still non struck and a quick clean up. I always soak it in the sink rather than let stuff dry in it, but it is way superior to any non stick on sale in Wal -Mart with coatings that peel off.

    I recognised the test that this pan went through because the design is an almost exact replica of a more expensive pan my family gave me that used to belong to a chef they knew and literally the design is near identical. Doesn't matter what it is little soap and water fixes it.

    DO NOT USE non stick cooking sprays, they leave a buildup and will make your granite stone start sticking. Happened to me when someone did it, I had to do a lot of light scrubbing to get all the non stick residue off.
