Thanks so much. I think the India videos are where I figured out a lot of things and I think they are my best. Here shooting on the fly with a walking tour others attended was tough but nana was such a great guide I was able to catch everything important… I hope. I’m not entirely sure where HCM hid but the central part of the country is highlands and one of the roads is called the HCM trail so that may be it.

Hello Ayngelina! Great walking tour, I'm with you, hiring guides in new countries! Is your pad a/c or fans? What about vegetarian food?
AC in every place I stayed, I think it’s the standard. And lots of vegetarian food in the cities, for those that eat egg it’s even easier but tofu is eaten by everyone so it’s also usually an option. If anything Alan complained of too much vegetables 🤣

1:35 It's hủ tiếu Nam Vang (Phnom Penh). So it comes from Cambodia. You can find hủ tiếu Tàu (Chinese version) easy in district 5&6. Hủ tiếu is invented by Chinese-Vietnamese.

It is Chinese through and through, Hu Tieu Nam Vang was brought to Phnom Penh by the Teo Chew people, even the name Hu Tieu emphasis this origin of Wo Tiu . Later the dish brought over to Vietnam through Chinese and Vietnamese in Phnom Penh. If you studied Cambodian cuisines they eat with their hands like Thailand, India, Hu Tieu is not a soup dish, you can't eat with your free hands .
Makes sense as many of the dishes I see in Asia are variations of Chinese dishes with phonetic variations of the original spelling, when I heard Hu Tieu pronounced, it sounded a lot like kwetiau in Indonesia.
Thank you for the history about Vietnam. I will definitely look her up next time I am in Vietnam. I normally tip generously when I go on any tours in foreign countries but I cannot speak for other tourists who felt they are entitled for anything free and never tip the tour guides. I feel bad for the tour guides!
I am the same way, guides are well educated and have the experience to teach but also entertain. It's not an easy job.

Oh that’s very interesting! Thanks for the correction. What is the difference between the two versions?
@@ayngelina not sure, but the Chinese version always comes from an old Chinese stall with very iconic decoration and also with wonton(hoành thánh) and dried daikon(which is red) the Cambodian version has dried shallot and fried garlic the topping is kind a mix base on the owner.

Yeah it was also interesting to see what I know as cakwe there the fried dough in soups I think they call quay. It’s interesting to see it adapted phonetically into different languages.

So I'm from the coast in Canada and always feel most at home near the ocean. I also need a place that is affordable, with good wifi so I can work and has a strong local culture. For that I think my top are Mexico and Vietnam. Throughout my travels here I was surprised Vietnam wasn't more popular because it ticks off a lot of boxes.

Definitely the plan as two months wasn’t enough time and we missed most of the north
District #3 has the best authentic Vietnamese cuisines/dishes. Those apartments were built by the South after the 1968 Tet' Offensive battles all over Saigon. The people's homes were burnt down like a giant inferno. I used to live in this district when I was young. The government built the apartment complexes to accommodate those who had lost their homes from this disastrous attack from the Communist. I used to walk through there to visit some of my classmates there. These apartment complexes were well kept and cleaner than the current states. They look run downed, overpopulated, filthy, currently. Now people opened businesses, eateries in these apartments to self-sustain themselves as the country is growing so fast without the assistances of the Communist government.
Oh thanks for that perspective. I think when I return to Saigon I'll stay in District 3 so I can be closer to the food. But thanks for that bit of history!

Not really correct on the events that led up to the VN war and the large role that the US played in it but that’s ok. HCM actually approached the US for help achieving independence from the French colonial rule but the US inaction drove HCM to get help from Russia.

@@ayngelina HCM led the war for independence against the French in 1945 right after the Japanese left and wrote in VN's independence declaration "“All men are born equal: the Creator has given us inviolable rights, life, liberty, and happiness." The US chose to back the French and adopt the Domino Theory foreign policy and the rest is history. A divided North and South VN was the result of the 1954 Geneva peace agreement after HCM's forces kicked the French's butt at Dien Bien Phu.

I love Vietnam but many people have pointed out that tourists often don’t come back for this reason. I don’t come for the sights but instead the food, yet it’s rare for a country’s largest city not to develop more tourism opportunities. Even Vietnams neighbours do this.
