From what I could tell, about an hour of looking at multiple different web sources, some math and using an RDR2 inflation calculator. Jack Sparrow's 3814 shillings means he owes ~$29913.42 in 2024.

The first two assault charges can be considered self defense as mr Gibbs was in danger and jack was defending him
However, given that the assault took place during an act of piracy, it wouldn't count as self-defense.

Technically, Salazar and his crew could be considered self defence. I mean, they literally fired cannons at Jack's ship, AND killed multiple people on it. Plus, they had also destroyed dozens, if not hundreds of other ships, killing or imprisoning everybody on board.
