wow, we’re the same age and i also had anxiety & depression quite badly around 14 - but we’re doing such different things in our lives, it’s very cool. i keep considering going to do a bread baking course and being an apprentice baker, this is only encouragement lol.

But I also listened to the book that you and your Dad wrote. I absolutely loved it. Thank you so much for sharing your story. It puts the joy you have in baking into a much more important context of finding a way to do what you love. I hope that the school system in the UK finds a way to assess and reward what you have done in learning how to bake and how to share what you love.

Great vids, Kitty. Keep up the good work! One thing I wish I could get with my bun/roll/slice/bagel is a little side cup of whipped butter and a knife to spread it. You could flavor the butter or offer it plain, and whipping it makes for great spread ability and is not too tough on your profits either. The spreader / knife and the cup could be made from environmentally friendly materials. Just a thought. Hi from Kansas City USA!

Nice videos :) I wonder how many variations of regular bread you do. Excluding those with paricular ingredients like wild garlic, do you use white flour, rye, whole wheat and or other flours?
Love this question. This is the range I usually do (all sourdough)… -Spelt and wholemeal -White and rye -Fluffy tangzhong tin loaf -Specials x2 -Focaccia Sometimes I do put rye, crusty baguettes, bagels etc
