Sans has a very strong determination to kill Frisk. like very strong determination. Notice how the hardest bosses (Undying, Metaton Neo [ik i spelled wrong], and Sans) all want you dead? Asgore should be the hardest boss, but he doesnt want you dead, he just needs you dead for your soul. He doesnt have the determination to kill you, but Sans, Undying, Mettaton has the strongest determination to kill you, thats why he's so damn hard
Except Sans is fully aware of their power to SAVE. He knows they can reset, so there's no point in fighting it, but what he's trying to do is have you give up. It's not determination to kill. It's determination to delay. That's why if you spare him, he will kill you instantly. He knows that there is a way to dodge everything; he INTENTIONALLY left it there. What he's doing is dragging out the fight by making you think you can beat him, when his attacks are too crazy to dodge reliably. To summarize, he wants you to think you can beat him, but the way they are arranged makes it near impossible to dodge.
