Counting only times dante fights the demon
Phantom:6(7) times, 2 are chases
Cerberus:2 times and Another subspecies
Griffin:3(4) times under mundus, returns under V
Nightmare:4 times, can Cause 1 more battle against phantom, griffin and Vergil
Shadow:3 Minimum, Several existed in mallet Island and a room is filled with them for a secret mission, returns with V in 5

Neven:2, i refuse to acknowlege the peak of combat encounter
Vergil:
Fought a possesses version 3/4 times in 1

And 4 times in 5(3 as Urizen and lost the first)

Nero Angelo technically wouldn't count. Angelo are souls trapped in armor. That makes Nero Angelo technically Vergil's devil Arm. devil arms don't count or Devil Sword Dante would be leading the list...
Vergil, Alastor and Artemis are only 3 demons that you see in devil arm form first.
And some tend to loose their personality with their returns.
Pro TIP: Are you a true fan of Devil May Cry and haven't played this game yet? Do yourself a favor and never play It.

If they add better hit effects and increase the animation speed by 1.5 then the game would look good. Really easy to do that, which is why I'm saying that specifically. Compare this to DMC 3-5 and you'll see that's the most obvious thing missing.

Returning bosses seem to have a curse.
DMC1 Phantom: A cocky coward who ambushes and chases you, thinking he's too big to loose.
DMC3 Beowulf: A vindictive punkass who hates everything about Sparda with a passion, will even go full Broly, screaming Sparda's name.
DMC4 Bael & Dagon: Grouchy touchy sneak
When they all return in DMC Peak of Combat: "RAWR."
Even Phantom got reduced into "rawr" in DMC2. Makes me scared of how dirty they would have done Mundus.

They fired the old one because they did not want to pay him. Instead they made a "be the voice of Dante" thing and the new voice actor is just a fan doing it i am pretty sure

Oh Man. This Game looks good. But thats all it does. The Combat seems to be boring and repetitive. The Style System looks to be Baby Easy. I wouldn't be surprised that it has some predatory Mirco Transactions as well.

The combat system is copied from Honki impact. The VA are different
They butchered the DMC5 Style combat AKA "1.0-1.4 combat" just to turn DMC into a Gacha game
i just dont recommend this piece of garbage, and that's the reason why i decided to Play DMC3 Using emulators
