Sobrang paborito ko ang beef mechado. Sa beef caldereta naman, OK din naman deep fry yung mga patatas, carrots, & bell peppers, ano?

Tama po sir, kaya mechado kasi nilalagyan ng mitsa na taba sa gitna ng baka. 😊 Nakalimutan ko na kung anong parte ng baka, kung di ako nagkakamali kalitiran.
Alam mong may experience siya sa food industry kapag piniprito yung patatas at carrots sa mechado. Ganun dun sa ibang putahe na Pilipino na may patatas at carrots na niluluto sa mga restaurants. Piniprito nila rin yung patatas at carrots para di magdurog at para din mas mabilis maluto.

Bogs , it is true that mechado, which comes from "mitsa" or wick, has a pork fat or beef fat inserted in the middle of the meat when it is clear of any fat ingrained in the meat. But if has enough marmalade fat in the meat you can do away the procedure of inserting strip of fat.
