    Kothambir vadi | कोथिंबीर वडी महाराष्ट्राच्या स्वादिष्ट कोथिंबीर
    भाजणीची रेसिपी
    Kothimbir Vadi is a Maharashtrian dish made from coriander leaves and chickpea flour. Here's a simple recipe:
    Ingredients:
    - 2 cups chopped fresh coriander leaves | कोथिंबीर वडी
    - 1 cup chickpea flour (besan) | बेसन
    - 1/4 cup rice flour | तांदळाचे पिठ
    - Green chillies | हिरवी मिर्ची
    - Garlic | लसूण
    - Ginger | आल
    - 1/2 teaspoon turmeric powder | हळद
    - 1 teaspoon red chili powder | लाल मिर्ची पुड
    - 1 teaspoon cumin seeds | जिरं
    - 1/2 teaspoon asafoetida (hing) | हिंग
    - 2-3 tablespoons sesame seeds | तीळ
    - 2 tablespoons oil | तेल
    - Salt to taste | मीठ
    - Water | पाणी
    - Oil for shallow frying
    Instructions:
    1. In a mixing bowl, combine the chopped coriander leaves, chickpea flour, turmeric powder, red chili powder,green chilli,garlic, ginger,cumin seeds, asafoetida, sesame seeds, and salt.
    2. Add 2 tablespoons of oil to the mixture and mix well.
    3. Gradually add water and mix to form a thick batter.
    4. Grease a plate or tray with oil and spread the batter evenly on it.
    5. Steam the batter for about 15-20 minutes until it sets and becomes firm. You can do this in a steamer or a pressure cooker without the weight.
    6. Allow the steamed batter to cool down. Once cooled, cut it into square or diamond shapes.
    7. Heat oil in a pan for shallow frying. Carefully place the cut pieces in the hot oil.
    8. Fry until they turn golden brown and crisp on both sides.
    9. Remove the fried Kothimbir Vadi pieces and place them on absorbent paper to remove excess oil.
    10. Serve hot with chutney or as a snack.
