Right! When your hand is pushed from the center, then you change from a punch to a bong sau to redirect the strike, then from there, you can attack. Or, like you said so well, if your hands are down and you get attacked, bong sau is the quickest way to stop the attack because the elbow is much closer then the hand, and you will be able to stop the attack. If you tried using your hand, by the time you got it up, it would be too late. One point though. If you use a step to the outside of the attacking arm using an angled step, with a body rotation square, you will more than likely avoid the attack. A body rotation moves your body AWAY from the attack and off of his center line, while maintaining yours, and puts you out of reach of his counter(s). Again, that is correct but you still have to use an angled step to the outside and a body rotation, which you did not do here. You are still in danger of his hook that way. The harder he moves, the more he is using his own force against himself. This is why wing chun works so well. By overcommitting his response, he is forcing himself to put all his weight and forward momentum on his front leg. The more force he uses, the easier it is to redirect the force because of his momentum forward. This is the same principles used in tai chi and judo also. This is why you use FORWARD INTENT also. It forces your opponent to totally commit to the strike, otherwise, your forward energy would overrun his and your strike would get through. It also causes him to open an area that was once covered by his hand, which comes over to protect the other side, allowing you to step into the now open area and attack, successfully. Even if he caught the second one, that would cause ANOTHER opening in his defenses that you can step into, which would get through due to an ineffectual counter and muscle fatigue caused by using antagonistic muscles in the arm and shoulder.

When you collapse ANY technique in wing chun, you are allowing your opponent to overrun yours. I've seen this in many Leung Ting videos where that clown (sorry Sifu) tries to explain it and does it improperly. Same goes for tan sao also.

I noticed a the intro to your videos, it says "Wing Tsun" which is the run off branch of true Ving Tsun. Is it a publicity thing for you to say it? Or do you really hold rank in Wing Tsun? I think it's kind of an insult to the best lineage we have, Wong Shun Leungs Ving Tsun saying "Wing Tsun" can be very misleading!

There is no WT spelling in the intro!

The Wing Tsun spelling, regardless if it is present in the video intro or not, only denotes the Leung Ting lineage. Nothing more, nothing less. I really wouldn't consider WT an "insult"; only another interpretation of the concept, just like every other lineage brought forth by students of Yip Man. There is no "true" Ving Tsun/Wing Tsun/Wing Chun... No "best" lineage, only different interpretations that have evolved along the way.
