Jamaican Easter Spice Bun 🇯🇲 Moist & Flavorful

- Jamaican Easter Spice Bun is a must have around Easter time, it's sweet, flavorful and a traditional favorite!!
*Ingredients*
6 1/2 Cups Flour (baking or all purpose)
1 bottle Dragon Stout, Guinness or Malta
1 bottle Malta
2 cups sugar
1/4 cup melted butter
2 Eggs
2 tbsp browning
1 tbsp orange or lime zest
1/4 cup guava jam, or any flavor (optional)
1 tbsp vanilla essence
1 tsp almond & rose water (optional)
2 tbsp baking powder
1 tsp salt
1 tsp grated nutmeg
1 tsp cinnamon powder
1-2 tsp mixed spice
1/2 cup raisins or currant
1/4 cup chopped cherries
1/2 cup mix peels
(Use more or less or exclude, optional)
*For Glazed*
Jam, sugar, butter, browning
Or simple some honey or melted butter)
This recipe gave 2 loaves of Spice Bun 8 & 9 inches.
Bake at 350 degree oven for about 1 hour or until a tooth pick comes out clean.

Racquel, you are my go to person for any recipe. I absolutely love that your videos are short and to the point. You are very organized and know what you are doing. Keep these lovely videos coming. I have tried alot of your recipes and they all come out good. I love bun but not the Easter buns, I dont like the fruits and raisins. For Christmas cakes, it has to be blended. The fruits could be blended as well or simple be excluded, would not take away from the bun’s flavor.

It looks delicious Raquel. Very simple to make too. We get a commercial version around Easter in Trinidad from Jamaica but your version looks very tasty and of course moist and fresh loaded with all those fruits. I will certainly make this.

Hi Racquel, I followed your steps with the exception of cutting back on the browning. But guess what? My bun came out very thick. Do you think I should cut back on the flour? What might I do to ensure it doesn't come out too thick.

The bun looks good but I strongly doubt that was 6 1/2 cups of flour. More like a bit over 3 cups.
3 cups of flour wouldn’t be able to make 2 Easter Buns…

@Racsfood so then you would use more than one dragon and Malta then? Because the ones I get where I live in Canada about 340ml each and that wasn't enough liquid to get your consistency. I had to double all the other ingredients to use 6 1/2 cups of flour. When I did that it all matched up and tasted great. So unless your bottles are bigger 6 cups is too much for 1 bottle each.

Andrene, I use 2 bottles, 1 bottle of Malta and 1 bottle of Dragon each with 275ml
I measure my flour using a measuring cup, 6 1/2 cups, the eggs, melted butter, vanilla essence adds to the liquid amount.
This is my go to Easter Bun recipe which always comes out perfect.
I am really not sure what mistakes were made on your part, but if it worked out in the end… that’s great 👍🏾
