Tonight making dinner I steamed some broccoli with unusually large stems, decided it'd be a shame to waste them so I roasted them on the grill, then sliced them very thin and used them in a quick slaw with onions and grilled jalapenos on fish tacos. I cannot tell you how weird it is to see this video in my feed right now.
I'm Coptic Egyptian and one of my favorite vegan snacks during Lent or Advent fasting as a kid was a warm pita filled with sauteed veggies and a butt load of potato chips. It gives off the exact same textural experience and it's oh so good.
I thought you were gonna shave the stems as the "lettuce" for the topping for the tacos. I think that would be a good idea as well..the only thing missing is salsa or Pico.
Looks like another creative combination, Stephen, and judging by the comments people seem to be enthused about making it. On the cheese, may I recommend block cheese you grate yourself (it doesn’t take that much time for this dish- it melts better and tastes better- and also I think a great combination is extra sharp orange cheddar and Monterey Jack (Tillamook is the best). & Never Melt cheese & tortillas in A Microwave! It 100% rubber-izes your torts. > Oven/ broiler/ 36 seconds (at most). Thats what you want. An Yes definitely ALWAYS Grate your own cheese. That preservative heavy bagged stuff, doesn't melt the same. Other than that I'm gonna have to try making these right now (taco meat from last night, all ready to go)! Thanks Everyone!
My dad taught me how to fry tortillas but our family just did it halfway and folded the hot fried tortilla over instead of frying it into a stiffer shape. Thanks for teaching me how to up my game, sir.
Small disclaimer: elephant garlic is wayyyy milder than regular garlic, so, if you're a garlic fan, skip that crap and use regular garlic cloves. Can't be certain if Stephen is actually elephant garlic, but it sure does look like it as I've never seen individual cloves that massive.
It’s used in Turkey and Lebanon, maybe other countries. It goes with lamb and foods like garbanzo beans, eggplant (baba ganuosh ) and spices like Za’atar and mint, pomegranate syrup, shawarma (chicken or beef) - it’s popular in Muslim & Arab countries (I am neither, so I’m not an expert, but I have used it.) It’s pretty cutting edge of Stephen to use it in a Gordita, I think! It tastes a little fruity, a little tart. I’m experimenting still.

As a mom, I appreciate the use of even the broccoli stock. Made this in combination with ur regular beef gordita and my son can't even tell there's veggies in it!!!
I think I'd stir in something like seitan crumbles. Keep it veggie, but get some extra protein. Our co-op (though probably the grocery store too, if it's one that has some vegetarian products) has some national brand that does a good chorizo flavored seitan which would be great with taco seasoning....

I loved this recipe and I didn’t have cherry peppers so I replaced it with some sundried tomatoes and some pickled pepperoncini peppers and it was great! I think I like it even better than I would’ve liked the cherry peppers
I'm a bit older, so the cheesy gordita crunch came along well after I had given up fast food, however we had a local chef who made an "elevated" version of it and my God was it good. I don't think his was quite as "healthy" as your version, but I guess I did kinda miss out on something lol.

Now he's moved on to intros that start with that same grotesque shot of him stuffing his face. I have no idea if the gordita crunch in this video is a good recipe and presentation. I didn't get beyond the first 3 seconds.
I wonder if this is how an Indian feels watching someone cook Japanese curry. No hate, it's just a little strange seing what the humble taco has evolved into. A few tips from someone who cooks a ton of Mexican, and American style Mexican food. Above all ditch the mexican cheese blend. Grate you cheese of choice fresh, munster in a good cheese for melting, while cotija or sharp cheddar (or even parmasean) are great for topping. If you have a Mexican or Central American market nearby, try "Oaxacan", "Central American" or "Salvadorean" cream (they're basically the same thing), it should be thick like sour cream and a little yellow. Finally try adding some chile powder into your spice mix, if you dont want heat try mild New Mexico or Guajillo chile. Mexicans commonly use a mix of Guajillo, Ancho with a bit of cinamon and clove, look up a birria recipe for proportions. I might try this brocoli mix for more traditional tacos, but it might need a little more to satisfy without the cheesy gordita. A little bit of chorizo or bacon might work. If you want to keep it veg maybe some nuts (walnuts or pecans) and some dried fruit like raisins or apricots could add dimension.
He did use chili powder- it was a pre-made mix. You can mix in a little water, salt to taste and a squeeze of lime if you have it to get a more drizzlable consistency with sour cream.
