The LSU AgCenter and Louisiana Healthcare Connections have partnered to produce the video series ‘Build a Healthy Meal.’ We’ll show you how to make easy, tasty and healthy recipes for the whole family to enjoy using low-cost ingredients that can be found at your local dollar store, grocery store or farmers’ market.
In this video, LSU AgCenter nutrition agent and registered dietitian Mandy Armentor and 8th grade 4-Her Luke show you how to assemble Sushi Stacks. In this delicious recipe, they’ll being using rice, which is a Louisiana commodity. Did you know the LSU AgCenter are the developers of a new type of rice called Parish Rice, which is higher in protein and lower on the glycemic index compared to other types of rice? The selection of rice is important for this recipe, any short- or medium-grain rice will do. This meal is fun to make with kids and can be served with a cucumber salad and a side of pears to make this a balanced meal.
Sushi Stack
Ingredients:
1 cup medium-grain white rice, cooked
1 pound fresh shrimp, peeled, deveined, and rinsed
2 tablespoons olive oil
½ teaspoon onion powder
½ teaspoon garlic powder
1 ½ teaspoon no-salt Creole seasoning
1 cup cucumber, diced
1 cup carrots, shredded
4 teaspoons Kung Pao sauce (1 teaspoon per stack)
Spice Mayo
4 teaspoons mayonnaise
1 teaspoon sriracha sauce
low sodium soy sauce (optional)
sesame seeds (optional)
avocado (optional)
Instructions:
1. Cook rice according to package directions.
2. When the rice is cooked, evenly spread it on a pan to cool.
3. In a medium bowl, toss the shrimp with onion powder, garlic powder, and no-salt Creole seasoning.
4. In a large skillet, add olive oil and seasoned shrimp. Cook over medium heat for about 3 minutes on each side.
5. Let shrimp cool. Then cut the shrimp in 1/2-inch cubes.
6. In a small bowl, stir together mayonnaise and siracha sauce.
7. In a 1-cup dry measure, layer ¼ cup of cucumbers, ¼ cup of carrots, 1 teaspoon of kung pao sauce, ¼ cup of shrimp, then ¼ cup of rice. Press slightly to pack ingredients. Carefully turn the cup over onto a plate. Repeat with the rest of the ingredients to make 3 more stacks.
8. Drizzle with spicy mayo. If desired, top with soy sauce, sesame seeds and avocado.

Cook time: 30-40 minutes
COOKING TIPS:
Use short- or medium-grain rice to ensure the rice is sticky enough to hold its shape.
Cook the shrimp until you see them turn pink about 3 minutes on each side.
Siracha sauce is spicy so a little bit goes a long way.
FOOD SAFETY TIPS:
Be sure to always wash your hands before and after handling raw shrimp.
