Clean the beans, pick out the small rocks (if any), broken beans, the dark beans, and the dried out rotten beans. Wash the beans with lukewarm water. NEVER put salt until AFTER the beans cook to avoid dark beans.

My basic bitch pot of beans goes like this. Soak beans overnight in water. Dump water next morning, clean beans, cover beans with water and boil. You can add as you please from there for aroma and taste. Onion and crushed whole garlic cloves at a minimum. Fresh bayleaf (3 sprigs) is a nice addition. Very simple and healthy dish.

I like to soak them for a couple hours, changing out the water when it gets dark. This helps to keep them from giving gas. Cook for a few hours adding bacon and a little rotel when they are semi soft. Mush a few beans to make them slightly creamy, add onion, cilantro and some salt and garlic powder. Also, using half chicken broth instead of all water adds flavor.

  • @LRdz126

The best way for me is to yes, wash them first. Then let them sit in water while your water in the pot comes to a boil, then put in the beans. This makes the cooking process a little quicker and helps the beans be cleaner looking. I also boil with garlic clove to release the ‘bean gas’

I get sick on pintos that haven't been soaked 7-8 hours (and not more!) first and then I do cook in the soaking liquid low and slow: never higher than a low simmer. Along with some fresh crushed cumin and salt and garlic, I add one cut up potato. The potato softens the skins and helps keep beans from bursting leave creamy whole beans that crush well, too. It took me a long time to figure it beans. It's like no one on TH-cam knows how to cook beans.

I sort and wash my beans. I don't presoak the beans. I add:
    4 chopped fresh garlic
    1/4 white onion finely chopped
    2 slices thin bacon
4 slices of mild pickled jalapenos ( Mt Olive or Hatch brand)
Two tablespoons of the jalapeno pepper juice
    1 tablespoon of regular sugar
The water level way above the beans
Bring to a rapid boil then stir it and put on the airtight lid and turn the heat down to a low simmer then stir a few times.
The salt is add after the beans are done cooking and in spare amount.
The beans broth will be perfect.
If you want to make refried beans, just mash the beans and use the broth to get the perfect consistency.
That's my favorite way to cook pinto beans.
The best pinto beans are the Casserole Brand.

In the morning, Rinse & cover with water and boil for 5 minutes rinse again and cover with water & boil for 5 more minutes. THEN rinse again & cover with water & bring to boil & finally, reduce heat to simmer for 2 hours.

For all those in the comments saying "don't you need to soak the beans?"
    NO! YOU! DON'T!!
"It makes the beans softer." Yeah, so does cooking the for a bit longer.
"It makes them prettier." (I swear I read that in the comments.) Are you f*cking kidding me?! IT'S ABOUT HOW THEY TASTE, NOT HOW THEY LOOK!!!! And my UNSOAKED beans look hella nice thank you very much.

I enjoy some of your recipes, especially when you throw the food at your camera. With all due respect, you will have to start when making beans as my mother showed me to separate the bad or chip beans and the small rocks that come with the bag of beans, yes, depending on were your beans come from you will need to freeze them first because the beans sometimes have a bug 🐛 in side and freezing kills the bugs. Then, use water to rinse more than once. At times, the darker the water tells you how old the beans are. I never wash my beans as my mother used to wash in the tub. Because we have a washer 😅 and last I dump the water after cooking 30 minutes and add new clean filter water along with 1 jalapeno G/R 🌶 and one whole onions 🌰 cut in 4 pieces ( some time) if you let set the beans in water for 30 minutes it will take less time to cook. The only things I cook outside are carne asada, chicken, shrimp, and vegetables for salsa. 🍋🍅🌰🦪🍤
Now y lesto and enjoy senorita. 😎
