Kashmiri Chicken Masala Caution: Recipe requires 1.5 cup of water at step 8. It's a lot of water. If you have tomatoes, chicken, and Yogurt then add only 1/2 cup of water, otherwise, it will take very long time for water to dry up and the meat is broken. Be careful with the amount of water. Ingredients: Oil 1 Cup Onions Sliced 4 Garlic-Ginger paste 1.5 Tbs. Section A: Star Annis (Baadyan) 1 Bay Leaves 2 Cloves 3 Green Cardamom 5 Black Cardamom 2 Black Pepper corn ½ tsp. Cinnamon stick 1. --------------------------------------------- Tomatoes chopped medium 4 to 5. Section B: Salt 1.5 tsp. Turmeric ¾ tsp. Red Pepper Powder 1 tsp. Paprika powder 2.5 tsp. Cumin powder 1.5 tsp. Coriander powder 2 tsp. --------------------------------------------------------------- Green Pepper 8 Chicken 1 kg or 2 lbs. Yogurt 1 Cup. Procedure: Heat oil in a pan. 1) Add Onions. Fry until light golden. 2) Add Garlic-ginger paste. Saute well. 3) Lower heat. Add all the spices from section A. Saute Lightly. 4) Add tomatoes. Mix well. Increase the heat to High. 5) Add all the spices from section B. Saute Lightly for 1 to 2 minutes. 6) Add ½ cup water. Cover and let it cook at medium flame for 3 to 4 minutes. 7) Add small 8 green pepper. 8) Add Chicken. Mix well. Saute for four minutes. Add water 1.5 cup. 9) Cover and cook for medium low for 10 to 12 minutes. 10) Increase the heat and Saute well for five minutes. 11) Add 1 Cup yogurt. Saute at high heat for few minutes until oil separates. 12) Garnish and serve.
