Most of pashtun and baloch dishes have only salt and black pepper. But the taste of the final will blow your mind. There is a dish called rosh which very popular in KP and baluchistan. You only have to boil mutton or lamb for 4 to 5 hours. Add onion, ginger, lehsan, salt and balck pepper. Then cook it on low flame for 4 to 5 hours. Its good for health and very good for musle bulid up
What a coincidence... My son learnt this from his Pakistani friends at University and cooked for his parents yesterday evening, and my fav chef comes up with the same recipe today! It’s indeed v simple yet tasty...and I teamed it up with some leftover masala ( tempering of mustard seeds, onion, tomato and turmeric) rice and voila it tasted as good as any biryani too!

It's true.. I'm from peshawar..and the namak mandi is famous for mutton tikka and mutton karahi specially. Mutton tikka is cooked on charcoal and you will be amazed to know that the meat is neither marinated nor tenderized..only salt is sprinked on it and it's bar b qued...and it's delicious...

AWESOME!!! You are 100% right Chef, about the vegetables. I always make this dish. The authentic recipe is no spices and veggies, the taste is oil, boned chicken, tomatoes and lots of love. I also put a little kasuri methi and end it with either GHEE or BUTTER on top and "adkar ke lachche", this takes it to a different level. It is a legendary dish and you touched on it this time. Also, in US we have RAAVI restaurant in Washington DC, and I have been there many times to enjoy this dish. Thank you for showing this recipe on your channel. Lots of love from PDX. ❤

Dear chef pleasure to see your videos as always :) 😊 i just want to point out one thing, we avoid using Bari Ilaichi in chicken dishes (except qorma) especially in Peshawri namkeen Karahi you made this spice is a big No. it will change the taste of the dish. We love it only with Salt and tomato bhunao. In the end garnish with coriander , coarse black pepper, and green chillies. Thankyou for making it please try Shinwari Karahi too. It does have zeera and coriander seeds. Many many Thanks 😊

There is a Ravi restaurant in Arlington, Virginia as well and the owner is Pakistani from Dubai. Their Kadhai's are amazing and the same as the Ravi in Dubai. This recipe looks almost exactly the same here, without the onion, red and green peppers. They also do not use any black cardamom, coriander seeds, and maybe they do not use any ginger. Thank you for replicating their recipe Chef Ranveer. We'll we making this for sure!! :-)

Chef Ranveer sir. Thank you for highlighting this awesome dish. Two things I do like to add, it can be cooked with oil, but if you want its true taste then cook it only with goat or lamb fat, and for mutton in addition to oil and salt, we need to add water as well, enough water to make mutton cooked half tender then once water dried up. Amount of water depends on mutton and we cannuse pressure cooker tp save time. After that we can fry the mutton in karahi, then the rest of the steps. Now I am no chef, I thought to add my two cents becasue some of your viewers might ask this question.
Karahi is the national dish of Pakistan. Every region in Pakistan has its own variation of it. If you put the masala similar to the one you created, by grounding black pepper and zeera (only) in Karahi itself after crushing the tomatoes then it becomes Saraiki Karahi.
I loved your alteration. My name is Maaz and I’m from Peshawar, basically used to live few kilometers away from Namak Mandi. The way food in Pakistan works is this: you start from Karachi (where I was born) where chefs are observed to have mastery in spices (masalhai). They are master of spices fusion with vegetables, meat, lentils etc. in a way that each spice has its own time of entry cooking duration to be taken care of and this is how you bring distinct taste in the dish. It’s different than anywhere else in Pakistan. Examples: Nihari, Biryani etc. You move upwards towards Punjab (Lahore) where you have focus on cooking time. Mix everything, bring in loads of oil and focus more on vegetables, lentils. You move towards the northern part, say Peshawar and you’ll get your food oriented towards meat and meat alone. The people of this part makes sure meat stays dominant ingredient and never to be overshadowed by spices or oil. North and Balochistan is mostly tribal area, a gradient of greater region with tribal features and common food. You move from North towards Afghanistan, and further towards Iran and then towards gulf you’ll have more focus on meat less on spices (with Iran being bit different for it has been an entirely different civilization). I think we the Northerners got it from Arab somehow (saying this based on my 8 years residential experience in UAE before moving to Australia). Anyways I really like the finishing touch of bit of localization on your end. Sugar, by the way, is never part of real recipe. Ravi Restaurant in Bur Dubai and Deira are really nice, so is Karachi Darbar specially the one in Mina Bazar Bur Dubai. Also, the pioneer of Charsi Tikka (mind it the guy is famous for the BBQ mainly, though Karahi is more or less same known). The name is Nisar Charsi, still alive. The advent of Charsi is not so distant past, say it got famous in 90s or bit earlier. Thank you for sharing this. You should also try Shinwari Qeema/Shinwari Tikka. An amazing place to have it in Dubai is Wakha Restaurant in Al Barsha (Wakha is derived from Ghwakha means Meat in Pushto, the local language of Peshawar).
We visited your restaurant Kashkan in Dubai for my son's birthday. We were quite impressed. Beautiful decor, ambience and the food, delicious. The service was excellent. We ordered Guntur mutton which we all loved, laal Maas, galouti kebab, shammi kebab, kaala chicken with sticky rice and mutton biryani which was non-oily and succulent with all flavours in place! Will definitely visit again.

At my home this is our favourite chicken recipe and we just call it Beeji wala chicken. It was my Nani’s recipe…. So simple so delicious…. And much later I realised through a TH-cam video that this was a classic Peshawari karahi…. Made sense because that’s where she grew up ❤️

We visited your restaurant Kashkan in Dubai for my son's birthday. We were quite impressed. Beautiful decor, ambience and the food, delicious. The service was excellent. We ordered Guntur mutton which we all loved, laal Maas, galouti kebab, shammi kebab, kaala chicken with sticky rice and mutton biryani which was non-oily and succulent with all flavours in place! Will definitely visit again.

At my home this is our favourite chicken recipe and we just call it Beeji wala chicken. It was my Nani’s recipe…. So simple so delicious…. And much later I realised through a TH-cam video that this was a classic Peshawari karahi…. Made sense because that’s where she grew up ❤️
