Chicken Thighs Grilled on Weber Kettle (Perfect for Beginners)

    I want to offer you a little bit of advice... Get the weber charcoal baskets (they come in a two pack at Home Depot, Ace Hardware, etc)... Place the two baskets in the middle of the grill and put your coals in them if you use a chimney (I bought a loof lighter when my chimney started to fall apart). Then take your chicken and basically place them AROUND the outside of the grill. This way you can almost reverse sear them, while allowing the fat to render in the thighs. Then when they are close to being done, about 15 to 20 minutes a side, put as many as you can in the middle of the kettle grill to sear them for at least 2 minutes, each side... Then swap them out for the ones that you couldn't fit. The 22" Weber kettle can fit up to a 4lb package of boneless thighs outside of the center of the grill. You may have to get creative to make them all fit, but trust me, it can be done. Depending on how hot the grill gets, you're looking at about 15 to 20 minutes a side.     Only found this channel this morning (started with the 5 things not to do) and now I'm hooked. I went a purchased a coal chimney (I've never owned one) and am picking up a pack of chicken thighs to make this tomorrow. Love this homestyle honest cooking, keep it up!

    I add corn and russet potatoes to the grill when I cook chicken. Grilled corn and a nice baked potato with that chicken is truly a meal.👍

    Once they are in the indirect heat zone, how long does it take? I’m still really very new at all of this and I’m learning. I just don’t want to put something on the grill at 4 o’clock and have dinner at like 8 PM.

    Here's a life hack for the boys, if you don't want to babysit the chicken on direct heat put it on indirect heat, let it cook and then sear it.. with the setup this dude has in video id put the thighs opposite of the coals and let em do their thing for maybe 15-20 mins and then move them over the coals . If you're in a rush you can do the direct heat and flip it multiple times which is fine also but for me it depends on the situation. In a rush it's direct heat and babysit but if i have time to chill and drink a few beers i let it hangout on indirect heat..
    With skin on chicken you can get a lot of flare ups from the fat and have to monitor it every so often. By putting it indirect you can let it slowly cook and render the fat and at the end get a nice sear..
    It's reverse searing but I do it for the lazy aspect rather than any cooking benefits like a steak would have by having more uniform cooking.
    I do this on frozen burgers on my pellet smoker too when lazy, put it on smoke and let it go 30 mins. Flip for another 30 and done..

    I prefer chicken breast over thighs. Those that say they get dry are not using charcoal properly. I score the breast, place them between chopsticks or skewers, then marinate them overnight. (Overnight because my days encourage me to forget.)
    I then prep on heavy aluminum foil and use the offset method on the grill. (Offset is coals on one side, meat on the other.) 10 minutes a side, flip end over end, for 10 more minutes.
    I prefer less seasoning so I can taste the smoke flavor.
    The first night serve it with veggies and starch, and the next day cold chicken salad.
