    I save and freeze the liquid that is released when roasting tomatoes and add it to soup. It adds so much flavor, I call it liquid gold

      I usually just put it in my pot and cook it way down before putting my salsa in, so you concentrate the flavours

      I roast all of my tomatoes these days for sauce with garlic, onions oregano and basil, salt and olive oil. I drain off the extra liquid and freeze in small containers about a cup or so. I treasure that liquid, it makes my soup. I purée the rest and freeze, that’s my sauce. With just two of us now, that’s how we roll. I am a woman who canned 100 quarts of tomatoes packed in juice, not water in one day with my Grandma’s help and my baby crawling around the kitchen back in the day, about 40 years ago. Things have changed, but those days were fun and satisfying. We are down to 12 tomato plants now. Three good hills of cucumbers and lots of herbs.

    I'm so glad you shared the real process of cooking. That's what really helps people who are learning. They follow a recipe exactly and think they did something wrong when it isn't perfect the first time they taste it. Then they get frustrated and may give up. I swear the most important lesson in learning to cook is to taste your food, then adjust it. As you practice and gain experience, you get better at anticipating what a recipe will need, or knowing what to add when it isn't quite right.
    I'm awful at sharing my recipes with people because I just add till it looks and tastes right.

      I'm trying to teach my daughter how to cook, and she is a very step-by-step person. (Where did she get THAT from?!?)
      So now I have a video to show her, before we begin our salsa experience, and she will know what to expect.
      Which is what makes it easier for her.
      This "real" way of cooking IS something everyone should learn how to do - in my opinion.

      I'm the same way. When people ask for my recipe I cant even say what I put in it. It changes almost everytime! It was only when I realized recipes were a springboard for creativity that i learned how to really cook!

    My dad was raised by his grandparents. In the summer, my great-grandfather grew fields of tomatoes. When ripe, they would pick them, and can them in metal cans on an outdoor fire to sell at stores. Water bath canning was almost the only canning my mom ever did. She didn't use the pressure canner except for when there was no option. Over the decades, water bath canning has been fine. Nothing has changed.

    "If you don't have cilantro, what are you even doing with your life?" Fell out of my chair chuckling. Completely agree. Jess, next time you use yellow tomatoes you can add some pineapple (maybe your ground cherries) and or some mango and you can have a fresher salsa. Quite yummy.

    I love adding lime juice to salsa!! Pico de gallo, tomatillo salsa, and fire roasted are some favorites of mine

      I will too of I'm making a Mexican style tomato sauce or salsa. I make a pico de gallo with a avocado or avocado salad. I don't mash my avocados. I leave them in chunks.

    If you leave everything whole and put heat up to around 400 until it all gets darker than your’s did this time you also get a much richer roasted flavor. I love the honey and lemon . Thanks so much for being just a Real person down to earth I appreciate that so much.

    Do you think darker varieties, Cherokee purples or black beauties, would have a more profound flavor in this? Darker tomatoes have become my favorite this year.

      Yes, definitely. I think the combo of the milder tomatoes, not roasting high enough with the oven preheating and those cilantro bunches being so big all played into it.

    Your videos, that I learn the most from, are when things don't work out as planned and here's how we're gong to adjust it. Or, it turned out different but it's OK like that and here's why.
    Right now I get frustrated several times a day, it won't always be like this, things will improve. I am better at turning off that frustration because you set the example. It's OK to get frustrated, take a minute, let it go and move on. Thank you for being a good influence.

    Oh, and I want to add that I really like your kitchen videos. My daughter (who is one of the pickiest eaters in the world), suggested making pickles with the cucumbers from our plant. She used the recipe from your recent Quick Pickle video. Can't wait to try them!

    When I learned to cook from my Italian grandma she always said “quanto basta” when making a recipe That means “as needed” When using garden fresh ingredients sometimes you need to tweek things a little Always taste your food before serving❤️💚

    I just had my first tomatoe sandwich in years and it was delicious. My big tomatoes aren't ripe yet so I bought one from a local farmers stand. I put two layers of thin slices, some mayo, salt, onion powder and garlic powder and wow, yummy!

    When I am using yellow tomatoes I make a fruit salsa. It is my nanas salsa recipe but with yellow and orange instead of red and then I add 1/2 a fresh pineapple and 3 mangos. My husband eats it all before I can get it packaged for the freezer!

    This summer I’ve been winging it with dinners most nights. Really trying to utilize everything coming in. I have a bad habit of making recipes up as I go and then when my husband asks for it again I can’t remember.

    I love that you show us "mistakes" because i have a perfectionist mindset sometimes and i would consider it a failure if it didnt come out just right instead of thinking what i could do to fix it. I am learning that its ok to learn and keep trying instead of saying i cant do something because it did not go how i thought it should.

    I LOVE that you shared this without starting over. Cooking is an art and IS a process. Although in MY opinion, if you dont like cilantro you should just skip salsa and go make your bruschetta! Lol.

    I have water bath canned tomatoes for literally decades using citric acid and salt. NEVER have had a jar fail and we have never gotten sick on them. I do it with juice, whole tomatoes and tomato sauce. I feel confident that it works. I have also water bath canned salsa and never a problem with that either. Just add 1/2 tsp. citric acid for pints and 1 tsp. citric acid for quarts. I also add 1/2 tsp. Redmans real salt per pint and 1 tsp. salt for quarts. :)

    I’m having a hard time figuring out smaller batches of canning. I’ve been canning for about 7 years. In the past when canning we would typically buy our produce from a local farm and do a day of canning... 50 jars of strawberry jam, 30 jars of tomatoes. Now I have 10 tomatoes and 2 green peppers! What do I do?! 🤣 Our garden is doing well but it’s the first year since I was a kid, it’s on the smaller side so there will be no 20lbs of tomatoes at a time! Already have plans for a bigger garden next year! 2020 has been a whirlwind! Jess I’m so glad I found you 😍

    We pretty much do the same salsa. I don't always roast the vegs but just whip it all up raw then freeze. In the winter it's better than any other salsa out there and tastes summery fresh. I love cilantro too and keep planting it throughout summer. Thanks for your always sunny personality, wish I could smile at walking through garden webs.

    I love this video and the fact that you are so down to earth and real. God has been tugging on my heart a lot in 2020 to homestead and garden bigger. Im a very emotional person and this may sound odd, but when I watch things like what you are doing, gardening, kitchen canning and ALL THE THINGS lol. It makes me want to cry because I want those things for myself as well. What Im trying to say lol, is your videos tug at my heart, whether it be I see myself in you, I see myself doing what you do, or I yearn for the day I do those things too. Thank you.     Hi Jessica. Thanks for the great salsa recipe. I made it last weekend with my tomato and jalapeño harvest and it turned out great. Everyone loved it and the freshness of it was extremely tasty! My jalapeños were not very spicy so I made two versions. the second version I toasted some red chili flakes in a bit of oil and added it to the salsa to spice it up. My husband and son loved both versions.

    I really appreciate how you show the oops, mistakes or not quite not the way you wanted it to turn out moments. I was not allowed in the kitchen growing up and have dealt with constant inept feelings for decades. Im almost 50 now and still find such great comfort from seeing the 'real' kitchen happenings. That is true encouragement to me. That the way I figured out cooking by making things do and fixin them is just fine. Getting rid of that I'm not good enough or inept feelings that are not the truth.

    I cook like you do as well. It drives my son crazy. He wanted to write down my recipes and I would pour the amount of whatever seasoning went into it into my hand and he took it and measured it lol I used to cook with written recipes for years, but now I hardly ever measure anything. Taste it and adjust. Thanks for showing us your salsa Oh one more thing. After your video on how to pickle, I did some refrigerator pickeling with my yellow cherry tomatoes, onions some red and green bell peppers. Added garlic, black pepper corns, chili flakes and corriander that I harvested from my cilantro. I love it! My son did not, but he is a tomato hater lol

    Kitchen food flips. Love it, pro realty is enough for me. Thanks for sharing. Oh and you can dehydrate tomato skins, tomato powder.helps to thicken juicy food.
    I'm off to put mine together.
    Right now I wish I had a big yellow tomato 🍅. Mine's all Roma. Pressure canning tomatoes is apparently supposed to make them healthier for you. Water bathing is just fine. Been doing it for centuries.

    Jess, making salsa today and I decided to watch your video. I roast my chilies, onions, and garlic. Tomatoes go into a huge kettle after cleaning them up and cutting in half. I cook/stew them for about 30 minutes, with salt and cumin to taste. And we use a masher to break them up a bit, that's for the chunky salsa. I do as you do for the roasted veggies and put them in the food processor. Then add to the chunky salsa and follow up as you did in your video. Next batch, the same process but I add everything to the food processor to make a smooth salsa. Also, I taste as you do, as I go. In my family, they enjoy very hot to very mild. Family and friends come over to pick up their jars. They never last!!! I also make fresh salsa, pico, for chips and dip. We enjoy your videos so much, please never stop making them. This family has changed and learned many ways of doing things from watching your videos. The easier the better, we say! lol Next is the greenhouse, a bigger one this time. Family and friends want to come over and garden in Great grandmama's place. Blessings from south Texas.

    You cook the way I do. When it's my recipes I do not measure so when I'm trying to explain to my adult children how to make it, it's hard to put a measurement on it. I am definitely going to try your salsa recipe minus that much cilantro. I like my cilantro in increments. Thank you for sharing it. it looks really good. ❤❤
