    You'll need..
    3-4 lbs chicken
    3/4 tablespoon salt (adjust)
    2 tablespoon Caribbean Green Seasoning
    3/4 teaspoon black pepper
    1 scotch bonnet pepper
    1/2 medium tomato
    3 cups pigeon peas
    2 tablespoon olive oil
    2 tablespoon curry powder
    1 teaspoon cumin seeds
    1 medium onion
    7-9 cloves garlic
    2 cups water
    2 medium potatoes
    2 tablespoon shado beni (culantro or cilantro)

    As one of your long time followers, I like the videos just like this. It's when you shorten everything that I feel like Uncle Chris isn't having fun! Love when you show how to cut up a chicken. I'll be following this video for tonight's chicken dinner but sadly, it will not be this particular recipe.

    Fantastic, the video was not long at all, we need that step by step method, now ah hungry boi, but its late here in the UK nearly 11pm, will definitely be cooking it this week as a COVID lockdown treat.     I always add a little tomato or ketchup to my curry. It really brings out the flavor of the curry especially when you are using a cheaper brand. I've never made curry chicken with pigeon peas, but it sounds good. I plan on trying this recipe.

    LOVE the cast iron Dutch oven! However, all those pieces of raw chicken (minus skin) you say is going in the "rubbish", goes in my freezer to put in my pot of home made broth!

    Eh Chfris was that dried pinion peas?from a tin it kind of precook so it would take that long to cook I think you Trini call Congo peas?

    I really want to know the texture of pigeon peas. Are they like green lima beans? Stiff skins and dry mush inside? I've had them plenty of times and can not aquire a liking to them. The only lima I can tolerate is baby white with smoked hock and sweet onion,then I have to chunk some cheddar into a bowl and pour the hot beans on top.

      Pigeon peas have a different taste and gesture than lima beans.

    Do you have a recipe for a good seafood stew? Something like a Caribbean seafood gumbo? If you don't know what gumbo is you need to go to New Orleans, and don't eat anything for 2 days before you go, so you are good and hungry.

      Chicken or meat collagen are not healthy .. take them skins off please so unhealthy.. try marine collagen if you not eating well

    The videos are definitely not too long for my taste, I don't know any cooking/recipe channel that has ridiculously slow vids. The ones there are miss a part of the cooking process necessary.
