What you'll need:
1 cup sprouted wheat flour
1 cup all-purpose flour
1 cup milk
1/2 cup ghee
1 cup sugar
1/4 teaspoon cardamom powder
1/4 teaspoon saffron threads, soaked in warm milk
Chopped nuts, for garnish
Instructions:
In a large bowl, combine the sprouted wheat flour, all-purpose flour, and milk. Mix well until there are no lumps.
Heat the ghee in a large kadhai or pot over medium heat.
Add the flour mixture to the hot ghee and cook, stirring continuously, for 10-15 minutes, or until the mixture turns golden brown.
Add the sugar and cardamom powder to the flour mixture and cook for an additional 5 minutes, or until the sugar has melted and the halwa has thickened.
Add the saffron milk to the halwa and stir to combine.
Cook for an additional 2-3 minutes, or until the halwa is heated through.
Serve hot, garnished with chopped nuts.
Tips:
For a richer flavor, you can use full-fat milk instead of low-fat or skim milk.
If you want to add a bit of color to your halwa, you can add a few drops of food coloring to the milk before adding it to the flour mixture.
You can also add other nuts and dried fruits to your halwa, such as almonds, pistachios, raisins, and apricots.
For a vegan version of Multani Sohan Halwa/Habshi Halwa, you can use almond milk or coconut milk instead of cow's milk.
