    Ingredients:
    2 medium-sized carrots (gajar), peeled and chopped into small pieces
    1 cup fresh or frozen green peas (matar)
    1 onion, finely chopped
    1-2 tomatoes, chopped
    1 green chili (optional)
    1 tsp ginger-garlic paste
    1/2 tsp cumin seeds (jeera)
    1/2 tsp turmeric powder (haldi)
    1 tsp red chili powder (adjust to taste)
    1 tsp coriander powder (dhaniya powder)
    1/2 tsp garam masala (optional)
    Salt to taste
    2 tbsp oil or ghee
    Fresh cilantro (coriander) leaves for garnish
    Instructions:
    1. Prepare the ingredients:
    Peel and chop the carrots into bite-sized pieces.
    If using fresh peas, shell them. If using frozen peas, rinse them under water to thaw.
    Chop the onions, tomatoes, and green chili (if using).
    2. Cook the spices:
    Heat oil or ghee in a pan or kadhai over medium heat.
    Add cumin seeds and let them splutter.
    Add finely chopped onions and sauté until they become soft and golden brown.
    Add ginger-garlic paste and green chili (optional), sauté for another minute until fragrant.
    3. Add the tomatoes and dry spices:
    Add chopped tomatoes to the pan and cook until they soften and release their juices.
    Add turmeric powder, red chili powder, and coriander powder. Stir well and cook for 1-2 minutes until the spices are well cooked.
    4. Cook the vegetables:
    Add the chopped carrots and peas to the pan. Stir everything well to coat the vegetables with the spices.
    Add salt to taste and 1/2 cup of water, then cover and cook on low heat for 10-15 minutes, or until the carrots are tender and cooked through. Stir occasionally to avoid burning.
    5. Finish the dish:
    Once the vegetables are cooked, add garam masala (optional) and mix well.
    Adjust seasoning if needed and cook for another 2-3 minutes to let the flavors combine.
    6. Garnish and serve:
    Garnish with freshly chopped cilantro leaves.
    Serve hot with roti, paratha, or rice.
