Watching a Navy CS make eggs is something to behold. I have seen them fill their griddle nearly side to side and top to bottom, feather them out with the back of their spatula, carpet the the eggs with ham, cheese, peppers and onions, cut into sections and fold up a dozen omelets in about 5 minutes. Thing of beauty!
Absolutely spot on .....funny people tell me I cant make omelettes or thats not how you make an omelette...hahahahahaahaa Heck we served about 2,000 a day..
A couple of tips you may want to try: 1-you cant try and find flavored tortillas. My and family and I love love the spinach flavored one, there is also a cheese flavored and tomato flavored ones as well. There is a ghost pepper one but there really isn’t any spice to it (for me). 2-try adding some milk to your eggs. It won’t take much. It helps them become a little creamier and lighter. When you whip (whisk) together with the milk, it helps maintain some of the air in the eggs thus making them lighter. I have found adding a little cheese to your eggs also makes them not only taste better (I love eggs regardless) but also helps them become even creamier than milk alone. I know you don’t really care for the chorizo being broken up but I find that once it’s broken up, it can spread more evenly through the food. Cooking your food separately helps creating a profile that isn’t one noted. Not sure if you’ve tried this, but add the chorizo to your eggs. Be careful with your chorizo, I have found that when you try to find chorizo in northern states, they add a lot of sugar to it making the chorizo super sweet. Another tip (a freebie), use Kerrigold butter (I may have misspelled). It is pure butter. Not added oil or water as a filler and tastes a ton better.
Yea, that's usually called choripollo. Great dish to make at home. A weekday specialty. Living in TN, you may have to make your own chorizo and freeze it. It's all about the peppers and herbs. I love your channel.

I sliced/shaved some nice sirloin into small pieces and sprinkled brisket rub on it and let it soak in for about 12 hours. Put the shaved steak on the griddle, it only took a few moments to cook. We made regular tacos and used the left overs for breakfast tacos. The steak was perfect!

Chicken and chorizo quesadillas. I order them all the time from my favorite Mexican restaurant and you will love it. Shredded chicken and chorizo quesadillas are the best, but it’s still good with chopped chicken
Another great idea for the breakfast fare, and a second use for the grande taco shell that I got for the crunch wrap recipe you have. On the crunch wrap, we are going to add the egg as well. Great video you two.

looks good to me! you aint lying about the price of avocados. it's crazy. also, i just noticed in your about section that you used to be a navy cook. alright! my louisiana grandpa was the ships cook for the first class, in world war two in the south pacific. when he got out in '46 he went to work on fishermans wharf in SF and worked at many of the popular places in SF and opened his own seafood joint. then he had to raise me when he retired! LOL. he lived to be 89. i think he would like your channel. thanks for this recipe!

Yes we have it lined up. I know people dont like excuses but its getting harder to balance life, full time job, and youtube. I have been in negotiations to lower my exceptions at work to focus more on youtube. That is on the list of a 1,000 things to do.
Hi @The Flat Top King you can take advantage of the grill to prepare your salsa, take 4 tomatoes, 3 jalapeños, half of an onion and a piece of garlic, roasted, toasted in the grill, after that, put them in the blender and add salt & pepper, belief, you are going to have a done a salsa for almost any breakfast, I cook my own salsa in the Blackstone grill, you will not regret.
I have to say when i first came across your channel i was thinking this is just another griddle channel. After watching many of your videos your channel has become my favorite. Very helpful and educational, no nonsense cooking and I appreciate that. Everything you cook looks amazing and if i am looking to try a new recipe, I search your channel first. For the looser chorizo, i've found cooking it and getting a little crispy, then mixing it with the scramble eggs before putting in the burrito.

For Chorizo, if you find a local butcher, a lot of times they have chorizo made up and it tends to be chunkier that the store bought varieties.

If you want the big size burritos like the ones at the taco shops you have to overlap 2 of them together, fill it and wrap like you normally do
