ya, pretty much how i synced the dual carbs on my 2003 yamaha 1100. i would hold them up to the sun as i was usually working outside and didn't have access to electricity.
i dont think your method is very accurate. i line up each throttle plate to just begin to expose the first progression hole. its important to snap the linkage a couple times anytime a screw is adjusted to let things settle into place.

I have a Suzuki marauder 800 and it won't go past 70 when I give it full throttle it jerk's and snaps
perhaps your main jet is clogged?
Yep sounds like the main jet
would a feeler gague work in there too?
maybe thin wire?
not so well as the feeler is flat but the carb is round
