I recently gave this method a try this weekend. Outside of deep frying your wings this is the best (and easiest) method to cook them. The pecan wood gives the meat a good light smoke flavor while the indirect heat crisps the skin up and keeps the meat super juicy. I highly recommend!

Vortex wings are the best. A couple things you might try...dry brine the wings with kosher salt, uncovered, on a rack in the fridge for at least a couple hours. Pull from the fridge and let them dry out for about 20 minutes. Toss them in a bit of neutral oil and season. Put on the kettle with the vortex and vents wide open. Crack the lid a bit, so you really drive that temp up to over 650 at the grate...I don't flip the wings...just let them go and check them in about 25 minutes. Then toss in favorite sauce, and "roll" them directly over the coals to char them up..so good and crispy double char buff wings!
I just did a lime wing rub- with hickory wood on the grate above B&B brisketts --- the color of the wings OMG- beautiful-- i did skin up as you did 20 mins-sprayed with canola aerosol-- flipped and did 15 more mins.. 178it perfect !!!!

I love love the vortex . I do turn the the lid a quarter turn every 10minutes when the vent comes back to the start they are done perfect everytime. I havnt even found the need to flip them anymore

I've been using the Vortex for wings for a couple of years. It's the only way to do wings. You should check out the Buffalo Seasoning from Owens BBQ. It's fantastic!
Great job as always! Personally, I like taking dark meat to around 200 degrees internal. Takes that meat from rubbery/chewy to a nicer, firmer bite - more like white meat texture. Doesn't dry out at all at that temp.
Glad to see you're using the Weber Kettle and those wings do look great. I noticed that you put the Vortex right on the wiper blades, but did you have the blades open or closed?😊
So you say to leave the top vent wide open. Does that go for the bottom vent also? I`ve just purchased the Vortex, never yet used it and ready to make wings on my kettle soon.
The wings came out very tasty tonight. I like the sauce, it was tasty, but i do prefer the sause to be hotter. Maybe i just find a hotter hot sauce and keep the same recipe to get that sweet & heat taste. I dont want ghost peppers or snything like that. Any recommendations for a hotter hot sauce?
Great video. I use the Vortex to cook wings and is pretty much the only thing I use my Kettle for anymore. I have the PK 360 like he does and prefer to do most of my grilling on it.

Good old Weber kettle. So versatile, so easy to use! Best all around cooker ever made. Don't tell my Backwoods smoker I said that...lol.

This is how I cook mine too except I give the lid a turn every 15 minutes and I also don't flip the wings. Mine are usually done in 40 minutes or so.
