    I landed in Cebu, late last night and am staying at a little local hotel for a couple of days before I head to Dumaguete. In my first 10 hours, I have met an amazing taxi driver that bent over backwards to find my hotel. Went to my room in a cute little compound, that is unlike anything that I have ever seen before. I came with my 2 dogs and everyone at the airport was so nice helping me get through customs. I woke up this morning in went in search of coffee and found a Sari Sari store and had coffee with them, we laughed and talked for over an hour and we had the best time. I have never experienced that in my life. Right than I knew that this is where I needed to come to. It is like a sense of peace has spread through my body. The number one reason I moved here is the people, and in my first few hours I have been treated better than I ever have in my life. I want to thank Micheal, and a few others for pushing me in this direction, his videos show just how wonderful Filipinos are. I feel grateful to be here. The title of this video couldn't be more appropriate.

      I have been to the Philippines 🇵🇭 5 times already and hopefully now start of July coming back for the 6th time to meet my girlfriend again and the Philippines for me is such an amazing country and the people are the friendliest in the world. Filipino's/Filipina's are amazing people.

      ​@@milagroslluisma3153I'm headed over there to live soon from Louisiana...there are no crawfish in the Philippines 😢 and although Cajuns are technically from French Canadians (the Acadie region of Canada now known as Nova Scotia)...I don't think many people would equate cajun food with Canada.

    Sir Michael, I'm 83 years old and retired in AZ USA. I try to bring my yrs. of experiences, both successes and failures to Comment on events. I'm not a chef and have never attended any prestigious culinary classes or academies. However, I have made "cooking" a sort of hobby of interest for me. I have many books describing herbs, spices, oils, cheeses, etc., etc.
    Enjoying the fares of restaurants or bistros or corner cafes, I've always tried to be close to the top cook or chef to pick up on their tendencies to "substitute" a required ingredient with a more available (yet of lower quality) substitute in their finished dishes.
    Not surprisingly, the more fanatical chefs/cooks refuse to compromise their ingredients. If substitutes are used, their behavior tends to transfer into their other areas of life, as well.
    In fact, I've found the same attitudes of substituting a practice found in all other areas of life, as well. Some might even refer to that behavior as cheating.
    As an amateur gourmet, I do NOT like cheats. Reputations spread like pandemics.
    I recommend you listen to your "gut" instincts and to Kat (Cat).

Well, near Nestas. if that is still there. You need to Name your dishes.. like: Aswang Sandwhich. and etc etc.. for Capiz.. like known for Aswangs... lol.. Anyway.. good to see you having fun.. doing stuff. oh.. that burger looked good. and the bacon wrpped sausage!

    Congrats Mr Smith. A little advice if you let me please. You can always get a cold beer anywhere. But great delicious food made fresh consistently is rare. One or two unique items to your bar are big winners also. Watch your food cost. Anything above 30% is shaky. Get your chef to go around and check what others are offering, and the quality and price of it. That's a good way of offering better options in your establishment. Small menu with a great Wow factor is best. Good luck.

      The problem is that it's not made for Filipinas taste, they'd rather eat inasal chicken, sweet Jollibee spaghetti and rice. They don't appreciate western foods because of their limited palette.

      Mike, you need to invite foreigners as your taste tester. Local Filipinos are not accustomed to foods like those. You should have had Frank Waggoner be one of your testers

    Right off the bat, if any American comes to your bar, you must have carrots and celery with those spicy chicken wings. Also you must have Franks Hot Sauce for the chicken wings!

      Frank's hot sauce and melted butter is the classic Buffalo sauce. I'm a Louisiana hot sauce man myself, with some Tony Chacherez's seasoning.

    The burger looks fantastic for a first impression!! One suggestion, put a toothpick on top of the burger to hold it all together with a small beaver flag on the top of the toothpick! 🇨🇦

    Filipinos as well as foreigners love seafood. Serve seafood like what the Hot and Juicy Crawfish are serving here in the US. Spicy shrimps and crabs, gumbo etc

      That is the advice I’ve heard as #1 tenet from small business owners since my childhood. Esp for first small business set up & especially especially for bar/restaurant. It is not impossible, it just requires total immersion.

    If thats aglio e olio that isn't italian or looks italian bro. Just add that ive worked in top 3-5% of best vancouver restraunts at the time i was in kitchens trained 10 yesrs for 20 different chefs including chef pierre the head chef that cooked for the vancouver summit with yeltsin and clinton, head chef that opened the pan pacific hotel for expo 86 to name a few. I like classic franks hot sauce for wings myself and also another favorite is sambal olek and honey yumm yumm. Indonesian hot sauce and honey, wings should be served with carrots ,celery anx a dipping sauce like blue cheese or a housemade ranch

    When the ladies said the Aglio Oilio pasta tasted weird, I can only say these words…. You must use quality extra virgin olive oil. If you use any other mixture of olive oil, you will get that weird taste. I went Over to this popular Italian Restaurant in Smallville, Iloilo City and ordered this pasta dish using olive oil. It left a bad taste on my mouth. I asked to see what olive oil they used. They showed me a huge plastic bottle of it. Quality extra virgin olive oil is only bottled in glass bottles. I hope you have the chef try making again the same dish, but using quality Extra virgin olive oil with lots of garlic.

      Indeed this really wasn't Olio Aglio, since olive oil is about half the dish. It's really good though when done properly!

    Michael, I used to own a restaurant in the USA years ago, and I know what you're going through. I took 2 restaurant sites and combined them into one. I had a 50's baseball theme going, and lots of tables and booths. I had 2 main chefs, along with helpers, a very good prepper and her staff, along with me and my wife working there also. I love cooking, so I was in the kitchen most of the time. It was an enjoyable time in my life, but due to economic downfalls and fighting the towns politics, I eventually closed the doors and moved on. Sadly, 4 other restaurants took over my place, and each one went bankrupt. eventually, it was made into a credit union. I tried to compete with 17 fast food places within 2 miles of me, and people didn't want family dinners, they wanted convenience.
    With your location, you have a diamond, just needs some polishing. I really hope when I get to Cebu next year, I can make a trip to your restaurant and enjoy your hospitality.

      Yes, I agree with vandinroth’s reply & will add that in recent vlog - I think the first moving into beach house one this past few weeks; M mentioned using those words something like, Cat’s job will be to take care of her daughter & our homes ..,& Cat chimed in softly “take care of you”. lol. But seriously, all that is quite a job, especially when newly moving in to a home ..Childcare & homemaking, I mean. In addition, she is interviewing & will have major role in managing staff. I heard M say that also.

      @@wintersojourn9356 how much income does she get from external sources for all that,that then can go to their financial resources??and the child is originally hers, so not really sure that it's right in calling that her job!!,but taking care of him too could be quantified as a job,and it's a definate contribution and job but does not provide added literal income. but i believe the original point was the massive costs and bills..adding everything up they have a staggering amount of annual bills which she cannot literally mitigate

    Michael; my Filipina wife doesn't like spicy. I don't like spicy as well. We like more on a mild level. The fish and pasta at the end looks like something we would eat. Everything is looking great for you. I'm happy for you.

      Yes, the regions my relatives are from (2 different areas) do not appreciate hot spicy. They like other strong spices like garlic, or bitterness like ampalaya. I’ve seen blogs that the Bicol region is famous for hot spice. & I’ve always heard Mindanao areas have hot spicy dishes. I’m sure other areas as well. But not a lot of areas too.

    It's perfectly acceptable to use shredded mozzarella cheese if you can't get proper cheese curd in PH - so many pizza places here in Canada use it.

      @@limtseho3540 based apon the latest government statistics more than 70% of all resturuant and bar businesses close with the 1st year and within the 1st 5 it's up to 80%and to me he is taking on multiple huge financial obligations and burdens that will make his ability to succeed highly problematic.and that he far,way to over extending himself on starting that bar and modifying as if it were already studio 54.with all the huge recent outlay of money, he should be just a little conservative until the bar has got some legs under it,then run

    I would suggest a score card on the tasting. Some tasters may have a particular sweet-sour spicy or not, etc. keeping good records also helps the chef with what he bought that day.

    Ask from San Miguel some big umbrellas for tables for Alfresco dining infront of the beach n also your signage so you dont have to pay for that...also some neon lights from san miguel, red horse etc for your bar...glass coasters from san miguel also

    I told you on another video that I watched a video on how to make proper cheese curds.
    1 gallon whole milk
    1/2 teaspoon calcium chloride crystals
    ½ cup water, divided
    1/8 teaspoon mesophilic culture
    1/4 teaspoon liquid rennet
    kosher salt
    I won't get into the entire process (it does take time and the temperature seems kind of critical) but, if you are making more...the time remains the same. So, I'd say make a pound to start for the next day and see if it sells out.

    BTW, I did run a restaurant before in Iloilo and San Miguel usually donates cases off beer and other merchandise for your opening day or any special occasions as long as you become an exclusive form them.

    There's a Food Truck business (Shameless Buns) in Vancouver BC that offers poutine and burgers w/ a Filipino twist. For example, they have adobo fries and sinigang fries. They also use
    pandesal as their buns for the burgers. It could be an idea you guys might be interested in for your bar. Excited to see more progress videos on your business!!

    Try making poutine using kesong puti (Filipino white cheese made from carabao milk). I think it is closest in texture and color to cheese curds.
