I've always had a very strong immune system but I can tell my body is not as resistant to things as it used to be. I was also almost brought to tears when I heard you talk about the grandmother who had the grandchild diagnosed with type 1 diabetes and because of your videos knew she would be able to make things for her grandchild that would work . I’m not a crunchy taco shell fan but I’m OBSESSED with TORTILLA CHIPS! I’m making these right now into tortilla chips. Lucky for me, I have all the ingredients and a dehydrator. Woohoo!!
@ The ones I made were too thick, about 1/16”. 24 hrs in my dehydrator at 155° (it doesn’t go higher than that), followed by 3hrs in my oven at 175° produced crispy chips for the extremely thin ones, but the 1/16” ones were a crispy/chewy combo. I’ll work on it. Love the taste! I just need to roll the dough between parchment to a scant thickness and then they should come out. I cut them into 3”x1” strips after the initial bake in the oven. Got about 60 chips out of the batch, so the next batch should be 120 when I make them super thin. I’m looking forward to attempt #2.

Chris these last two videos of yours have landed at the perfect time as I'm reclaiming a carnivore keto diet once again! Having been a snacker my entire life, and once I'm feeling better thinking a little cheating is okay, it's so easy with the bad snack foods laced with unhealthy ingredients to cause one to totally fall off the wagon. Having some chips and taco shells should make a keto and or carnivore diet long-term much more desirable thanks much man you are a food genius!

Having said that, I'm not a fan of struggle food like Tacos that require you either tilt your head or the taco, to consume it properly; however, using tortilla chip molds to make chips to scoop salsa, well that would be a game changer, now wouldn't it? 🌯> 🌮

I watch this Mexican woman who is amazing on how she has soooo many recipes she can throw out but anyway I want to make her recipe of pork carnitas. if you leave them flat and dehydrate I assume you would have carnivore Doritos (if you cut them in quarters). But you could make the Taco Bell crunch wrap with your soft tortillas combined. A dehydrator is in my future!

Well that is delicious looking but way overboard for my setup. I live in an RV full time so this is a little bit not for my option. Someday I'm going to try this recipe. For now I will stick with my shredded cheese and a griddle. Crisp it on one side flip it crisp the other side gently. Take your cheese and hang it on a spoon. I set up two glasses and put a wooden spoon as a bridge and then drape my cheese crisp there. It folds naturally like a taco. The best part is I use a wide flat handle made from bamboo. That creates a bottom that is flat. But your taco shell looks delicious. Count me In next time. 16:59
Howdy, Great video and recipe. I've made (non-Carn) taco shells with almond flour and whey. I've also made crispy chips out of plain cottage cheese. So when I saw you use cottage cheese and whey, among other ingredients, I knew this was going to be a winner. Parchment paper also comes in rounds, small ones the size of a tostado and large rounds like the size of a cake pan. Also, I wonder if using my tortilla press would work on this for getting them thin. Luckily I also have a dehydrator, Ive used it to crispy up my cottage cheese chips. I have all the ingredients to make this. So thanks for the great ideas.

Like your wife, I LOVE Mexican food. I don't have a dehydrator but I think I will try these on the lowest temperature I can in the oven to see how they turn out. I might put foil on top of them to minimize the browning. I am new to your channel and really LOVE your content. I'm curious why you know so much about the science of food? The science behind food and the chemistry and physics of it is super interesting to me and I love to share what I learn. I’m a highly-researched nerd TH-cam chef, and doing these recipes requires a much science as it does art. I’m obsessive on my calmest days (ask my wife 😂) so I refuse to accept recipes that are only halfway there. It’s a fun process of learning for me, and I love that it helps people to share what I can come up with afterwards. 😊
I unfortunately can't lose weight if I do some of these recipes. My body just won't let me. But I can maintain my weight and enjoy these. So once I'm done with the weight loss part of my diet, I'm definitely going to add in a few of your amazing recipes to give some variety. Thanks for everything you do. ❤️

OMGosh..I'm so HAPPY now! I used to keep taco shells on hand for after work..get some precooked chicken out of the freezer, heat that up, add sour cream, lettuce, cheese, and green taco sauce to a shell...3-4 of those was dinner... (I'm all about not cooking during the week :P ) Haven't had a taco since my diabetes diagnosis over a year ago (which I'm proud to say is completely controlled by diet; last A1C was 5.4) but I just miss the crunch of a quick taco dinner after work... You had me at "soft shells just don't work!" because..they do NOT! Just gotta get some protein isolate ♥ I may add a drop or two of corn flavoring. I use it to make faux cornbread..I'm ketovore not carnivore, and I do like cornbread with my carnivore Chili I learned to make from you! (and yes I will still add the lettuce and taco sauce. Tacos NEED lettuce and taco sauce!)

Now I can see me spending a day on the weekend doing a couple batches of taco shells and popping them all in the freezer -- taco shells for a couple months! (I eat out of my freezer a lot. It's all home cooked on the weekends then frozen, but with the diabetes I just can't eat any decent premade foods any more...)
Makes total sense. Yes these would be great. A froze them for a few days in a freezer bag and then set them on the counter to thaw for a couple hours. They were great. 😊👍🏼
This raises a question: why mimic foods that go against the philosophy of a meat based diet? These substitutions may seem harmless, but they often trigger cravings for the real thing, undermining the intention behind the lifestyle.
This raises a question: how many people in the world refuse to try a carnivore diet simply because they can’t imagine giving things up? How many struggle to stick to one because of the pressures around them like social settings, parties, and more? How many kids with autism understand “eat meat”? How many elderly people are going to give up things that seem familiar? Your comment is dogmatic and ignorant of the millions or even billions of people who could find this helpful that you judge as not meeting with YOUR philosophy. The diet isn’t dictated by how YOU think it should work. That’s pure arrogance to think that way. Also if you think this triggers cravings then you need to understand the difference between an addiction or a psychological issue. Maybe you have a psychological issue you’re placing on others because you don’t know the difference. I can give you hundreds of stories of how this type of recipe helps people daily. Read the comments sections and find it for yourself. THOUSANDS of them exist on my videos. Who are you helping with your approach exactly? The very fact you’re saying “this goes against the philosophy” means you don’t understand what the carnivore diet goal actually is (you think it’s some club of elite people), and you also don’t think about how you might be discouraging people who truly need help from even trying because they can’t “do it right” to your satisfaction. What a stupid heartless approach to people who need help. Get over yourself or leave, because your attitude helps NO ONE, and I would hate for even one person to lose their chance at a new life because of your public judgmental ignorance about your precious “philosophy”.

Another option would be sticks the width of the dehydrator. Take out racks and slide the sticks in place and hang them over the sticks in the dehydrator. 😊👍🏼
This is great! Being formerly from Texas, where Tex-Mex rules, I've been missing tortillas and taco shells to hold all my carnivore goodies! Wondering if you could add a teaspoon or so of Alluose to help with the browning? That's added to carnivore breads to help them brown better. Just a thought. And way to keep that marriage together, LOL! 👍
You could maybe add allulose but the low temperature of this is to prevent browning because these proteins tend to taste bitter and off when browned. If you’d like to try if recommend placing the complete taco shells in a 375 oven to been after they’re already dry.

I’m not sure way pannier cheese is. If you’re referring to paneer cheese it might work, but i haven’t tried. You’d need a little cream or something similar to make up for the water content not found in paneer that you get in cottage cheese.
You might be able to a little, but like I said in the video you have to be careful overcooking proteins like that. They tend to get dry and crumbly and pretty off putting when cooked too far.
You can use it, but you’ll probably need some regular gelatin as well. Toasting changes the gelling crystalline structure so it may affect texture. This would probably work if you used half of each but I haven’t tried so I’d have to experiment to see.
You can, but it will still be a faint yellow. But you can certainly do that if you have access to eggs like that. What I would avoid is adding extra yolks for color as that will change all the ratios.
These look good. It seems to me this recipe could easily be turned into crispy tortilla chips for snacks, dipping etc. Just the shaping could be modified. What do you think?
I would love to try these but just like the potato chips I do not have a dehydrator 😞 I did check them out and the cheapest I could find was way out of my budget. I need to win the lottery 😕 How long to finish these off in the oven and at what temp?? I might try a half a batch just to see how it goes cooking them that way.
Totally get it. Like I said in the video 200F in the oven. Probably 2-3 hours in the oven but I can’t say for sure as every oven will vary as will the humidity where you are, which ovens don’t handle removing as well, so you’ll have to check them every 15 minutes or so after the first 30 minutes.
Chris, is there anything else we can substitute for the egg white powder as manufacturers typically use sodium lauryl sulfate as a whipping ability in the final product. It's also hard to get pasture raised and it's very expensive either way. Thanks!
A clean egg white powder would be freeze dried egg whiter and nothing else. It sounds like you’re referring to meringue powder or something similar. I don’t have a substitution because the egg white powder is why this works. Ordering online this amount of egg white powder costs maximin of a couple bucks generally for me.

You’re going to need some amount of egg white powder to bind things together most likely. Other proteins won’t set the same way egg proteins do, and the one whole egg isn’t enough to hold this together on its own.
Wow wow wow, It's just me here to eat carnivore and my other half won't even try these, can I make the batter and freeze before the first bake to take out and do 2/3 at a time? or would I freeze after the first bake?

I’m a highly-researched nerd TH-cam chef, and doing these recipes requires a much science as it does art. I’m obsessive on my calmest days (ask my wife 😂) so I refuse to accept recipes that are only halfway there. Awesome, will try making chips! But what if I hate the crunchy taco shells and just want the soft, pliable tortillas? Do I just skip the dehydration stage, or is there more to it?
I’d recommend my other tortilla recipe as these are probably not going to stay pliable enough for you when they cool down.

OMGosh..I'm so HAPPY now! I used to keep taco shells on hand for after work..get some precooked chicken out of the freezer, heat that up, add sour cream, lettuce, cheese, and green taco sauce to a shell...3-4 of those was dinner... (I'm all about not cooking during the week :P ) Haven't had a taco since my diabetes diagnosis over a year ago (which I'm proud to say is completely controlled by diet; last A1C was 5.4) but I just miss the crunch of a quick taco dinner after work...
You had me at "soft shells just don't work!" because..they do NOT!
Just gotta get some protein isolate ♥ I may add a drop or two of corn flavoring. I use it to make faux cornbread..I'm ketovore not carnivore, and I do like cornbread with my carnivore Chili I learned to make from you! (and yes I will still add the lettuce and taco sauce. Tacos NEED lettuce and taco sauce!)

Now I can see me spending a day on the weekend doing a couple batches of taco shells and popping them all in the freezer -- taco shells for a couple months! (I eat out of my freezer a lot. It's all home cooked on the weekends then frozen, but with the diabetes I just can't eat any decent premade foods any more...)
Makes total sense. Yes these would be great. A froze them for a few days in a freezer bag and then set them on the counter to thaw for a couple hours. They were great. 😊👍🏼

This raises a question: why mimic foods that go against the philosophy of a meat based diet? These substitutions may seem harmless, but they often trigger cravings for the real thing, undermining the intention behind the lifestyle.
This raises a question: how many people in the world refuse to try a carnivore diet simply because they can’t imagine giving things up? How many struggle to stick to one because of the pressures around them like social settings, parties, and more? How many kids with autism understand “eat meat”? I’ve been watching too many carnivore channels lately, and I’ve been caught in a cycle of yo-yoing-up and down, always failing and then posting big thumbnails about how they’ve failed and how they’re getting back on track in a few days. Another option would be sticks the width of the dehydrator. Take out racks and slide the sticks in place and hang them over the sticks in the dehydrator. 😊👍🏼

This is great! Being formerly from Texas, where Tex-Mex rules, I've been missing tortillas and taco shells to hold all my carnivore goodies! Wondering if you could add a teaspoon or so of Alluose to help with the browning? That's added to carnivore breads to help them brown better. Just a thought. And way to keep that marriage together, LOL! 👍
You could maybe add allulose but the low temperature of this is to prevent browning because these proteins tend to taste bitter and off when browned. If you’d like to try if recommend placing the complete taco shells in a 375 oven to been after they’re already dry.

I’m not sure way pannier cheese is. If you’re referring to paneer cheese it might work, but i haven’t tried. You’d need a little cream or something similar to make up for the water content not found in paneer that you get in cottage cheese.

You might be able to a little, but like I said in the video you have to be careful overcooking proteins like that. They tend to get dry and crumbly and pretty off putting when cooked too far.
Can you use toasted gelatin? Would that alter the flavor or texture?
You can use it, but you’ll probably need some regular gelatin as well. Toasting changes the gelling crystalline structure so it may affect texture. This would probably work if you used half of each but I haven’t tried so I’d have to experiment to see.

You can, but it will still be a faint yellow. But you can certainly do that if you have access to eggs like that. What I would avoid is adding extra yolks for color as that will change all the ratios.
These look good. It seems to me this recipe could easily be turned into crispy tortilla chips for snacks, dipping etc. Just the shaping could be modified. What do you think?
I think the shaping and some ratio modification would do it. Keep an eye on my channel this next Saturday.

Totally get it. Like I said in the video 200F in the oven. Probably 2-3 hours in the oven but I can’t say for sure as every oven will vary as will the humidity where you are, which ovens don’t handle removing as well, so you’ll have to check them every 15 minutes or so after the first 30 minutes.

Chris, is there anything else we can substitute for the egg white powder as manufacturers typically use sodium lauryl sulfate as a whipping ability in the final product. It's also hard to get pasture raised and it's very expensive either way. Thanks!
A clean egg white powder would be freeze dried egg whiter and nothing else. It sounds like you’re referring to meringue powder or something similar. I don’t have a substitution because the egg white powder is why this works. Ordering online this amount of egg white powder costs maximin of a couple bucks generally for me.
Cottage cheese is not available here. Will it work with ricotta as a substitute?
I would think so, but I’ve never tried. You could also make your own cottage cheese if need be. But I’m imagining ricotta would likely work.

A few. Not many. On carnivore without dairy you basically have meat and eggs. Not much you can do other than meat and eggs with that. Here’s a dairy free gravy I did.

You’re going to need some amount of egg white powder to bind things together most likely. Other proteins won’t set the same way egg proteins do, and the one whole egg isn’t enough to hold this together on its own.

I’d suggest making the shells and then freezing them to thaw and serve for tacos when you want. Storage instructions are on the recipe card.
