Completely Different

Now something completely different from anything we've presented on this channel. Kelly makes some bread and butter pickles (B&B pickles) in an express manner. Using this type of recipe, there is NO cooking on the stove, no filling your home with the (sometimes sickening) aroma of cooking, Start to finish, this recipe takes a total of approximately 3 hours - the majority of which (ie, 2+ hours) is spent waiting for the pickles to cool before 'canning' and refrigerating. Here is the recipe Kelly used, along with parenthetical notes on what we'll change with the next batch:
Ingredients:
-2 cucumbers (each about 10 inch long) sliced thin
-2 onions (small to medium) sliced thin
(we'll use fewer onions and/or more cucumbers to have a visible mix of at least 50% of
each after slicing).
Seasoning (recommend less sugar than recipe and/or more vinegar):
-1/2 cup vinegar
-1 cup white granular sugar
-1/4 teaspoon celery seed
-1/2 teaspoon table salt
-1/4 teaspoon mustard seed
Mix seasoning thourghly and pour over sliced cucumbers and onions.
Microwave on high for 5 minutes
Remove from Microwave, stir well, then microwave 5 more minutes on high
Remove from microwave and let cool before 'canning' (recommend using glass jars)
Makes a total of about 44 ounces
Keep refrigerated to retain freshness (and healthiness)
