I used to make Boston cream pies but then I figured out I could do it as a poke cake. I have nobody to feed anymore my mother put just passed away and she was my last living relative so I'm still going to do all of my baking and give out goodie boxes to someone.

The pudding cake my mom made, was called an Icebox Cake. She use three to four layers of Graham crackers. One layer with vanilla pudding in between and the other with chocolate pudding, then repeat, and put sliced banana in between each layer, and on top, in a glass baking dish. Cover well and put in fridge, for at least 8hrs. Then top each piece with cool whip, when ready to serve. Delicious! Was a long time ago, we still love it. 😋😁👍

For the Eclair cake, you can make a lemon version, simply change it for lemon jello, clear or creamy, both the same, still use cool whip, just change the frosting for vanilla mixed with a couple of tbsps of sugary lemonade mix.
Microwave the can of frosting about 15-30 seconds before putting it on the eclair cake. Makes it easier to spread and changes the consistency slightly for more of a ganache.
Great recipes. When I fold in cool whip, I don't use the beaters. I just fold it in. That way it stays light and airy. Keeps a nice consistency. Thank you!
Christine Sexton: I thought about that too, you never use beaters to fold in whipped cream or topping as that high action breaks down the "fluff". That's probably why the mixture came out runny.

Made the no bake eclair recipe with what I had on hand! 2 lemon 🍋 pudding packages-boil method, graham crackers, chocolate chips, coconut oil & powdered sugar. Followed or format with these things. Whipped the pudding with hand mixer. No cool whip nor heavy/whip cream. It came out awesome & everyone loved it!! Thank you for the awesome recipe. Can’t wait for our store to be stocked normally & be able to go shopping again!! Thank goodness for restaurant bulk buying group!!

I made the eclair cake. Itcwascso pretty, I took a couple of pictures. I had some really ripe bananas, so I added slices to the cake and a chocolate ganache on top. Everyone loved it. My aunt ate hers and some of her mom's, too. The dessert was gone in 3 days. And it was a big dessert, too.
My mother made the eclair 60 yrs ago, sometimes adding sliced bananas in between one of the layers. Soooooo good. And sometimes white icing. Just a change up. Mary

Nilla wafers are a good option for a graham cracker substitute for the last two recipes. I have used ground-up rice Chex in place of the graham cracker crumbs in the last one for a Celiac friend. If you over bake some cookies that are a little bit too crisp for you but they're not burnt you can use those so they soften
For the eclair, you can also use chocolate pudding instead of frosting. It's super-refreshing in the summer when everything is ice-cold. I do that with my poke cake.

Nix on the Cool Whip and used real whip cream instead. Made it even more decadent and rich... the first time I made a chocolate frosting and the 2nd time, a Boston Creme Pie choc glaze. Amazingly yummy. Must try your other dessert recipes but intend to share or give away otherwise I'd be scarfing it all down myself. Thank you!!!

I just made these but with a little bit of a twist. I didn't have any graham cracker so I used Nilla wafers and my husband doesn't like chocolate so used Jam and made peanut butter and jelly bars! I only used one cup of powdered sugar and I think that's why my mixture with a tad bit runny so I ended up putting some quick oats in there to help thicken it up. Substitutions aside they were still super delicious!!!!

You can also add. 1/2 -3/4 cup of finely ground graham crackers for a nice crunch in the peanut butter bars. And don’t be afraid to just roll into balls and dip just half in melted chocolate making “ buckeyes” All good ... thanks for sharing your sister inspired recipes!
Realizing the recipe already has graham crackers in it, should I add more to make buckeyes? I only ask because I did make the bars and they were very buttery. I’m wondering if you “Barbara Viera” and I’m only asking Barbara here, found them less buttery after adding MORE graham crackers?
Jamie Harrison yes, they might firm up more for rolling. Trial and error based on peanut butters etc. they didn’t refridge them which hardens up the butter ,making it easier to roll.
My aunt use to make this recipe. She would take a can of chocolate frosting put it on the microwave for a few seconds until it is runny and then pour it over the top. It sets back up when you put it in the refrigerator
Use the actual Oreo cream and get rid of half the sugar they have sugar inside the cream filling. That to the cream cheese with half of the sugar then do the rest as they say to do. Awesome
I could see myself sitting down with this peanut butter extravaganza with a big spoon! That’s what I do when I make chocolate ganache. Decadent yes but oh so yummy. (I don’t eat the ganache all in one sitting, I make it last a few days LOL)
Our family called this ice box cake and we made many diff versions with different flavors of pudding and different varieties of graham crackers (plain,chocolate, cinnamon grahams) Our favorite had alternating layers of choc and vanilla pudding
So impressed and very interesting thats what thinking outside the sqaure and clearly evolving its like baking cakes and switching it around and delivering something new like for a example instead chocolate cake go for a much healthier option say grapefruit or mango or pineapple or honeydew or apricot added crushed almonds nuts now that would be exotic and on a winner! ✈️

I have used Gluten Free cookies to make the chocolate peanutbutter bars and used either a dark chocolate candy bar or made my own chocolate frosting with a sugar free powdered sugar to make the frosting. I have a wheat & grain allergy and also a milk allergy. The bars taste awesome and I usually need to leave a few bars at home when bringing this dessert to church for an event so I can have some. Otherwise they are all gone.

Have you thought about adding the chocolate on the bottom of the pan and let that cool in the fridge for 30 minutes so it is still a little soft for your Peanut butter graham cracker mix in and the add more chocolate on the top and let sit in the fridge for 2 hours I like a lot of chocolate. I cook a coco mixture recipe on the stove and pour it over my eclair pie so the chocolate drizzles down into it cuz I dont like frosting and its delicious!
I love these terrific dessert ideas. I noticed that the dry ingredients kinda puff out when trying to mix, so an easy fix would be to punch a hole through the middle of a paper plate and place the paper plate on the upper part of the mixer blade before mixing. Happy cooking and love the recipes.

Put the store bought frosting in microwave for 10 seconds, stir,another, 10,, stir if its softer your good, if not 10 more seconds.. it will easily pour from from container.. put in freezer, or fridge to reharden..your adding eclair recipe into fridge or freezer anyways... Viola.. easy to spread frosting without messing up your top of dessert

For the peanut butter bars. I simply mix one can of sweetened concentrated milk with 3 spoon of p.b and ground digestive biscuits and it goes yummy 😎

When I make my Oreo cupcakes, I crush the whole Oreo, filling included. Tastes great!

When making eclair cake and using a container of frosting, put in microwave for a few seconds till it's pour able and then pour over top.
With the eclair ice-box cake, try putting a thin layer of the chocolate icing on the crackers! Extra chocolate in the middle!

I have been making the eclair cake for years. It’s a favorite of my kids in the summertime.
What kind of chocolate frosting do you use
Another idea: Use one half oreo biscuit in the bottom and then use the other half to press the filling into the cup
Use the actual Oreo cream and get rid of half the sugar they have sugar inside the cream filling. That to the cream cheese with half of the sugar then do the rest as they say to do. Awesome
That would make it a mini Oreo Cheesecake/cup Sandwich! :)

I could see myself sitting down with this peanut butter extravaganza with a big spoon! That’s what I do when I make chocolate ganache. Decadent yes but oh so yummy. (I don’t eat the ganache all in one sitting, I make it last a few days LOL)

Our family called this ice box cake and we made many diff versions with different flavors of pudding and different varieties of graham crackers (plain,chocolate, cinnamon grahams) Our favorite had alternating layers of choc and vanilla pudding
We didn’t frost it. We just added a cool whipped cream when serving
So impressed and very interesting thats what thinking outside the sqaure and clearly evolving its like baking cakes and switching it around and delivering something new like for a example instead chocolate cake go for a much healthier option say grapefruit or mango or pineapple or honeydew or apricot added crushed almonds nuts now that would be exotic and on a winner! ✈️

I just wanna say that I really love your videos
I have used Gluten Free cookies to make the chocolate peanutbutter bars and used either a dark chocolate candy bar or made my own chocolate frosting with a sugar free powdered sugar to make the frosting. I have a wheat & grain allergy and also a milk allergy. The bars taste awesome and I usually need to leave a few bars at home when bringing this dessert to church for an event so I can have some. Otherwise they are all gone.
I made the Oreo one and kept put the discarded cream in the mix. I don’t know who could ever throw away Oreo cream!
Trying the cheesecake, it looks delicious plus the video shows how easy y’all make it look. I’ll let you know how it goes, wish me luck!
I make the eclair cake with chocolate Graham, put mint flavor in pudding, with green food coloring, use ice cream hot fudge topping,& decorate with Andes mints

I’ve made the chocolate eclair cake years ago and forgot about it. I have a husband who loves banana pudding. I’m going to try combining the two. I’m going to try with graham crackers and another one with wafer cookies. Then I thought on top of each pudding/whip layer putting a banana layer
Made the eclair cake once but substituted chocolate graham crackers and oreo pudding mix.
All three recipes look easy and so delicious, but I'd choose the peanut butter bars as my favorite. Who doesn't love the combination of peanut butter and chocolate? Yum-o!
Have you thought about adding the chocolate on the bottom of the pan and let that cool in the fridge for 30 minutes so it is still a little soft for your Peanut butter graham cracker mix in and the add more chocolate on the top and let sit in the fridge for 2 hours I like a lot of chocolate. This was delicious.

That person who didn't listen when the professionals said add something sweet to your pandemic grocery list. Now they can't make any of the "no-bake" or "two-ingredients" recipes they've been watching on TH-cam for half-an-hour. But I'm just taking a guess.
I cook a coco mixture recipe on the stove and pour it over my eclair pie so the chocolate drizzles down into it cuz I dont like frosting and its delicious!

I love these terrific dessert ideas. I noticed that the dry ingredients kinda puff out when trying to mix, so an easy fix would be to punch a hole through the middle of a paper plate and place the paper plate on the upper part of the mixer blade before mixing. Happy cooking and love the recipes.

I wonder if you softened the peanut butter in the microwave with the butter, It would be easier to mix in. I would try that. I'm sure this desert is scrumptious. And I'm going to try it. !
Put the store bought frosting in microwave for 10 seconds, stir,another, 10,, stir if its softer your good, if not 10 more seconds.. it will easily pour from from container.. put in freezer, or fridge to reharden..your adding eclair recipe into fridge or freezer anyways...
Viola.. easy to spread frosting without messing up your top of dessert
