If you keep a slightly damp kitchen towel over the sheets you aren't using yet they won't crack as easily.

It is 4 layers, but you fold them into triangles so the dough overlaps. 🥰 hope that makes sense!

The dough can be tricky to work with. Make sure it is the right amount of layers thick (4) and don’t pull it out of the fridge too early.
