BTW, for next time, just leave your bechamel cook a bit longer, it will thicken as it comes to a boil - you will not need to add extra flour during the cooking. You mix the flour with the butter and cook until it smells a bit nutty, that is to get the raw taste of the flour out, when adding in more, it is not cooked and will also cause your lumps. Believe in your recipe and yourself, you did good!

Very good for a first attempt Lia, it looks delicious (I love the crusty well done bits on top of my lasagne). A little tip for next time, put your pasta in the dish as soon as it's cooked and don't add any oil, the starches that get released in the water should hold it together nicely.

Everyone's oven has a hotter side. Rotate the casserole halfway thru cooking time. Thanks for the tip on letting the onions, etc. sit in the vinaigrette !
Lia, the first rule for a roux is to put all the flour at the first with whatever fat you're using.. You can't ever go back and add more flour because it lumps up like crazy and the flour tastes uncooked. If you need to thicken it, turn up the heat until it condenses. If that still doesn't work, add a pinch of corn starch. It looks wonderful though! Well done.

I made this today and it was absolutely delicious!! Thanks for the video and the excellent recipe, although I put a sprinkling of chilli flakes on top for a little kick and you can never go wrong with a greek salad, my absolute favourite. I might make it with a tomato sauce next time and see what that's like compared to regular lasagne.
You can usually just place the pasta angled into the water, as it cooks the end in water will soften and you can slide the rest in. Would give you long noodles to line up in the baking dish. The jumbled noodles take more space up than aligned ones will. Looks like a delicious dish, will have to try sometime.

I know this was 5 months ago but here's a couple tips for a quick, delicious beshamel: - add plenty of flour in the beginning because if you add more flour at the end it won't cook and you'll taste the flour, - when you add your milk do two parts milk and one part heavy cream (you will get the right consistency sooner), - set your burner closer to the medium heat setting, it takes much less time to finish the sauce... don't stress about lumps, they go away with plenty of mixing. - originally, beshamel would get a tiny, tiny shave of fresh nutmeg- try it next time! Enjoy!!

If you cover the top with tin foil for like half the bake then it shouldn't too crispy on top. I will do that when I make lasagna and half way through remove it to brown it. It's fun to make something you grew up having and make it yourself. My son is starting to do that with his gf. I went there last weekend to make ravioli because he hadn't had it since Christmas and wants to start making it at his place. His gf wanted to see how I make it first.
Those maccherone look very much like what is labeled buccatini here. It's the hole that makes the shape. Sucks up sauce and lets the thick circle cook through before the outside turns to mush

I have made pastitsio dozens of times, love it. I use beef and nutmeg, also red wine. I use elbows or bucatini

We store tomatoes on the counter and only refrigerate any cut tomatoes.

Tomatoes should be stored at room temperature, that's how we do it in Italy. The texture becomes mealy if stored in the fridge.
