    this was the very first Sam video I watched, and that night i decided to make this dish. it has sense become one of my wife and i's favorite meals. I was never much of a cook until i started trying to recreate his meals. just wanted to say thanks for all the help, and confidence to try and make new things. I'm eating much better now!

      Henrik then you don’t know what you are missing out on.. Some nice juicy thighs covered in my favorite sauce make the majority of the best memories of my live. The rest of the favorite memories have something to do with various chicken dishes..

    I know this'll be buried in the endless void of comments but for anyone who wants to make this but doesn't have access to gochujang (like me), you can use miso paste and red pepper flakes as a substitute and it tastes the same. This also applies to any other dishes with gochujang

    Totally making this. I bought some Gochujang because I felt like I needed it but haven't used it yet. It was just waiting for this recipe. I am more of a chicken breast kinda girl. I don't care for the taste and texture of thighs and legs. Too greasy? No idea. Just don't like them much. And who the eff downvotes this video? Haters.

      Try sweet potato starch. That's what I use when I make my Taiwanese fried chicken.

    When you said "spicy GARLIC fried chicken," I thought you meant 'spicy garlic, with fried chicken', not 'fried chicken with a little garlic in the sauce.........' I need more garlic! LOL

      Agreed, but I think just add more garlic than he did and it will get to where we want it. Or better yet, saute little garlic just to get the fragrance then put that in sauce mix. Shit just made stomach growl. I can almost taste it

    Made this last night. Had to substitute wheat flour for potato starch, but the double fry came out really nice. Added more garlic (lots more) some extra sauce. I like more heat, but this is a great base.

    Ok Sam, my wife and I are apart due to work and I am just renting a room in San Clemente. I have been watching your show every day while I eat dinner. I so wish I had what you where cooking instead of the sandwich I’m eating. I don’t have a shove or oven to cook. I am adapting some of your techniques in my frugal cooking so thank you.     Went to Sam's not not tacos today, Kelly's shrimp tacos were WONDERFUL and they didn't overcook the shrimp.

    Sam, I made the chicken using your double fried method. It was crispy and delicious but I made a habenero orange sauce to coat the chicken after it was cooked. Placed this chicken in top of cooked jasmine rice, and garnished with chopped green onion and cilantro. Very delicious, thanks for the inspiration!

    Sam's recipe is like civilization. The chicken is the people. The government is the crunchy, grease-laden layer that surrounds it. Now... some people like a thick layer of government, but I propose that if you can make things every bit as crispy, but with a thinner layer... then thin government makes for every bit as good a fried chicken as a greasy one.

    Thank you for sharing this recipe! I love fried chicken and I am always trying in improve on it and I am wondering what would happen if I use potato flour, regular flour and a little corn starch. My next project may be those three combined with a perfect batter I came across. I wish I could find that Goccugang in my area, but all I can find is the more liquidy one. Thank you again!

    Hi all! Sam, just made this for the kids and I. Amazing! So super crunchy. Haven’t used potato starch before. We will keep it in the cupboard from now on. I actually met you several years ago in San Diego at a NACUFS conference. (You set the hotel fire alarm off but who’s counting that stuff) - kids and I are big fans. Keep it up!

    Made this tonight with one modification. We didn't have the Korean pepper paste, so I tried Sriracha. Had to cut it with a little ketchup because it was a tad too spicy. What I ended up with was delicious, and my family of six was fighting over the final pieces of chicken. Great recipe - thanks!

    Funny thing you mentioned potato starch sounding like walking in fresh snow. Foley artists (people who make sound effects) often use corn starch and walk on that on to create the sound of actors walking in snow.

    Made this tonight just swapped the Korean spicy garlic for Buffalo sauce and my family went insane. Easily 10000000000000% better than any fried chicken I've ever tried to make. Takes a while to cook but like 0 prep time. Will do this one again.

      I'm in Ohio, as well. I feel it! In my hometown I would never find Gochujang but we moved to Columbus about 12 years ago and I can find just about anything if I look hard enough.

      Lol when I make my imitation chick-Fil-a I cut my pieces up in about the same size and total cooking time is...4 minutes.

      8 minutes for the first batch, the 2nd batch is 8 minutes. so in total after 16 minutes... they are done

      @@Nova-Soul He cooked the first batch 8 minutes, the second batch 8 minutes. Let them cool put them all back in for another 8 minutes. Total of 24 minutes. Each piece cooked for a total of 16 minutes.

    Thighs have so much more flavor than breasts and it isn't even close! I also feel like thighs are much easier to cook without drying them out

    Delighted to see this on here this morning when I got up. We’ve been doing a very similar recipe for Korean wings - awesome stuff - tonight we were planning on Korean fried chicken (thighs) and waffles, because why not!

    Tiny pieces of chicken fried for 16 minutes ? Must be cooked to death no? Takes less time to fry a bone-in piece of chicken ?

      Agreed, i double fry chicken cubes with batter and its tops 3-4 mins per batch. these must be super overcooked

      One thing to note is that chicken thigh meat is very resilient to overcooking since its laced with fat. That being said, I have no idea on fry times so they may very well be overcooked.
