When I was in Japan we were also recommended the Omakase menu. In my opinion it’s better then ordering yourself, you often get things you would never order. Also there is often something included that you can’t order from the menu.
That's great to see the Japanese chef who can engage in the (English) conversation! It's more natural for us to know things directly from him, even though we appreciate English subtitles or voiceovers. 😊

The fact that you did not use shoyu shows respect to the chef and an appreciation for the natural taste of the sushi. Can't wait to visit Japan again after Covid. This channel is awesome.

Both are acceptable, so it is actually up to you! Generally I use chopsticks, but I've found that a lot of omakase sushi chefs will encourage you to eat with your hands!

Fun video. It made me wonder; when is it appropriate to pick up sushi with your fingers vs picking it up with chop sticks? Always enjoy the videos.
