    I weigh my bags and jars in grams once they are sealed and then write the number on the bag or lid. Before I open it I weigh it again and if it has increased, I know moisture has gotten in. I do the weight in grams because it offers more precision than ounces.

    You COULD store the mylar contained products in a filing cabinet...simply create "folders" for carrots, peas, etc...

    You can wash and dry the used Mylar bags. Then fill and seal again. Each time you reseal the Mylar it will be slightly shorter. So save those mylar bags.

    Back when I got my Foodsaver it came with canisters. I use my canisters to seal small pickle jars like a chamber. When I got small amounts of dried food those little pickle jars are handy so I don’t need to use my mason jars.

    I used the method of putting jars into my freeze dryer until I damaged the clip that held the pig tail to the rack. That's when I found out they were selling chambers at Costco. They were not cheap, but I've never been sorry I bought one. Freeze Drayers are too expensive to risk damaging. I'm wondering if the food sealers maybe don't seal well enough to use without and OA packet? If that's the case, the OA packet won't keep the jar sealed long term either it would seem. I used just OA packets until I got the chamber sealer and had a lot of jars just not hold seal.
    I've been freeze drying for 12 years but only used glass jars the past 2 years. There is always something new to learn about this newer way of food storage. I'm glad people are willing to share what they learn.

    I love the size and simplicity of my For Jars hand vacuum sealer. All three pieces: pump, regular mourn and wide mouth easily store inside my utensil drawer. The affordable cost is a plus as well as the off-grid capability.

    Thank you Carolyn for addressing the sustainability of using mason jars for storage, I use them ALL the time for things other than canning. Another question that I have seen pop up recently is the difference in oxygen absorbers and desiccant moisture absorbers, and went to use each of them. As you stated, the oxygen absorbers can easily become defunct if they are exposed too long to the air and as far as I know, there isn’t a way to know if they are still viable if we use them. I have used desiccant moisture absorbers with great success in my vacuum sealed jars, and there are some desiccants that have beads in them that change in color when they are no longer useful. I have also heard that the desiccant moisture absorbers can be recharged and reused, which also addresses sustainable practices for those who are interested.
    Thank you for demonstrating the use of the freeze dryer for vacuum sealing the jars also.

    Great topic! We dehydrate lots of items and odds and ends of small quantities. Our Foodsaver also has an accessory port and we bought jar attachments years ago. Game changer!!

    I never only use my mylar bags once. I use them multiple times over. We use mylar more for large bags of flour, grains, pasta and sugar etc. I also pressure can so we have a lot of mason jars. We just bought a freeze drier and are waiting on delivery. looking FW to starting it. We have vacuum sealers both electric and hand pump. i understand you can also vacuum with the freeze drier.

      I came here to say that too. For a demonstration of that you can search on TH-cam “Rain Country vacuum sealer”. Heidi has demonstrated this several times and five of her videos popped up when I did the search.

    Oh wow! I didn't know you could also use a freeze dryer for vacuum sealing too. That would be really useful for even just things you've dried in the dehydrator or over your wood stove. A really valuable piece of equipment for sure.

    Storing in jars vs bags also eliminates the risk of puncture that can occur.

      Out here, rodents will have a field day with anything plastic or mylar, but obviously can't chew through glass.

      Everything goes in glass jars, anything stored in bags is only for freezing. I’d rather brown paper wrap. When I was a kid, any meat mom bought was cut on the spot, wrapped in brown paper, tied and she’d freeze it soon as she got home

    I have an idea! I have a vacuum pump that have used to service automotive a/c. I I just have to find something to use as a chamber that can handle the vacuum without imploding. I can add an adapter for the vacuum! Thanks for the video.

    Mice can't chew through glass as well. I had bags stored in a basket. Mice infiltrated my storeroom last year. Chewed into plastic bottles and bags. I'm allergic to Mice. So glass jars are my go to from now on.

    Oh no, mylar is also stored in tubs . Sectioned off or one while tub for veggies. Glass hars take up SO MUCH room, they break and you SHOULD NOT allow light inside the jar
    I write the contents on construction paper and put it inside the jar. You can also put it on the outside. But don't let light get to that food.

    🏹🇺🇸🇺🇸., l been using my freezer dried machine just like that a Harvest Right since 2021, l just take out my tray rack container and l cut a out wood shelf and slide in after gasket back on and machine to dryer mode.. I didn’t put oxygen packages in jars didn’t think would need them after machine done such a good seal and so far in jars no problem without Oxygen pouches. 🤞Love your videos and your family so together.

    Have you ever freeze dried alfredo sauce? I love having a jar of some sort of sauce on hand for those easy dinners, but I hate storebought alfredo! And you aren't supposed to pressure can dairy, so freeze drying would be a wonderful option!

      Because of the higher fat content, you can freeze dry it, but keep in mind you will likely want to use it within a year if stored properly.

    Does a new oxygen absorber need to be added each time you open and reclosw?
    Do you vaccum seal the jar containing oxygen absorbers?
    I was thankful for her demonstration, because when i hear quickly, my mind sees myself racing to apply...frantically! But she shows it just means as your able/ sooner than later. Just doing it immediately, not frantically 😅

    Quite often, I will dehydrate things put them in a jar and vacuum seal it but go back say a month later and find out I’ve lost the seal. That’s not such a big deal on my dehydrated stuff but on my freeze dried stuff that would be a big problem.

    I've heard that the sealers that standalone (are not connected to a food saver) do not seal jars very well. And if they do seal them, the seal usually doesn't last long. Has anyone experienced this?

    I am so concerned about botulism, that I am afraid to vacuum seal food, even if it has been freeze dried or dehydrated. That's a reason I prefer mylar bags, because it isn't void of all the oxygen. Problem is, what you said, the food can go bad. Pressure canning is a lot more time consuming, but I feel safer with it. What are your thoughts on botulism and vacuum sealing?

      They will help maintain flavor, texture and color of food items by eliminating oxygen. Different size jars/containers do require higher cc's of oxygen absorbers.

    You don't need equipment to vacuum seal a jar. Just put a 100cc oxygen absorber in and put the lid and ring on. It will seal the jar on its own.

    Are oxygen absorbers the same as those desiccant packets that come in some foods, like the cans from Augusson Farms? I save those in a jar in case we accidentally get our cell phones wet, but I’m wondering if I can reuse them in jars I’ve sealed.

      Oxygen absorbers and desiccant packets are similar but have different purposes. Oxygen absorbers remove oxygen from the package to prevent oxidation. It would be best to start with a new pack for each jar.

    I have vacuum sealed numerous foods(flour, rice, sugar, dried beans, etc.)and even some freeze-dried browned ground beef and rotisserie chicken, and I did not use oxygen absorbers. So far I haven’t had any issues and it’s been almost 2 years.
    Before I started vacuum sealing I researched a couple other sites and they led me to believe this way was safe. Should I now start using oxygen obsorbers or can I continue as I have been doing? I usually let my sealer run up to at least 25.

    Yesterday I open a 10 pack of oxygen absorbers, used 1 and put the other 9 in a glass jar and sealed it. I did not put a ring on the jar. This morning I found the jar had lost it's seal, the inside of the lid was soaking wet and the oxygen absorbers were warm. Any ideas what happened? I used the absorbers in pint jars this morning. Do I need to replace the absorbers?

      She states at the beginning of the video that you have to use a special device on recycled jars from prepacked food from the grocery store. Where I live, I can buy mason jars at Walmart.

      Yes. It is best to store the jars in a cool and dark area to extend the life of the food. The color will fade and they could lose nutrients over time when exposed to light.

      The advancement of technology has allowed us to preserve the variety of foods that we have access to, that our elders did not have access to.
      You can still air dry foods but you have more risk of moisture while storing.

    I have been vacuum sealing freeze dried food in mason jars for awhile now. I have an after market set up to use with my Seal a Meal. It appears I have a seal on the jars only to find that the jars lose the seal after a few months. Not good! I am adding oxygen absorbers now to all my freeze dried food sealed in jars, but it’s been frustrating to lose that seal. I’m storing the sealed jars in a cool dark environment. I think now my problem is the after market attachment. I hate to have the freeze dried food I’ve grown and preserved degraded by the moisture it picks up in the supposedly sealed jar. Has anyone else had this problem?

      My jars sometimes lose their seal, too. Very frustrating. The brand name canning lids are worse than the reused store bought canned products jars.

    Realize that "air" is less than 25% oxygen. So if you use a mylar bag, it might not look like you have vacuumed it all out. The oxygen absorbers only take out oxygen, not the remaining nitrogen in the bag.

    Why are you using an oxygen absorber in the jar when you are sealing the jar in a vacuum chamber or in the freeze dryer? all of the oxygen has been sucked out so there should be no need for the OA. If I have missed something, please let us know. Also tell us what you did wrong when you lost all the FD food.

      My question, too. Vacuum sealing should take care of the oxygen.

    Can you get away without using the oxygen absorbers? Isn't that what you are doing by vaccum sealing it?

      It is best to use at least the oxygen absorbers. Vacuum sealing removes more air, but if the seal fails, it is good to also have the oxygen absorbers in there.

      Vacuum sealer never gets 100% of air/ moisture out. So o2 absorber gets the residual oxygen and moisture left in.
