    As a former head chef and kitchen manager I will note a few things. First, that bird looks amazing and VERY juicy! Whoever cooked it did a very good job on the meat! Second, do NOT remove the skin! You lose a lot of flavor and also a crispy texture to the bite! Third, if the skin dulls your knife you either have a very poor quality steel or a terrible edge. Buy Wusthof knives or if on a budget Victorinox are not terrible.

      He also did not cut out the oyster out of the turkey when seperating the thigh off the joint! That's the best part of any bird!

    I lost my Dad in April this year, he was an English guy but loved Thanksgiving more than anyone and was always the one who carved the Turkey. 5 minutes before dinner this year we realized no one knew how to do it, this video saved the day. I ran to the basement to watch it in secret before anyone got too sad staring at the uncarved bird. Thank you for the guidance. ❤

      Thanks for sharing that, I'm sure your dad was watching. I moved to another country and am cooking the turkey as I am writing this comment. It's 6:30 in Argentina and I am carving the Turkey for the first time, I usually cook it and a breast for my large family but my brother in law always carved the birds. The video will be a big help and your comment was grounding. Peace Lucifer!

      My dad taught me how to carve the turkey from when I turned 18, and he made me do it, always telling me that I'd be the "man of the house" one day, like it was a rite of passage. We would do turkey over Christmas instead of Thanksgiving as our family tradition. He passed last year, and I'm glad that he taught me how to do it, although my mom was also the hero, she nails every turkey, seasoning and roast always on point. My in laws have always been impressed. I look forward to hopefully one day pass this onto my kids too. May our loved ones rest in peace while we embrace them in loving memory. ❤️

    Thank you Ray for getting right down to business in this video. I’ve done dozens of birds, but needed a good thigh slicing technique. Love yours. If you new to carving do it just like Ray does. No one will know it’s your first time. 😊

    I did a serious hack job carving the turkey in 2018...found Ray's video while the turkey was in the oven and was amazed how much better a job I did in carving this year. I'm not sure why so many people get crazy about cooking the turkey, there are many simple recipes out there and online. I found the carving to be the hard part. I have no opinion about peeling away the skin, I did and no one seemed to miss it.

      I leave the skin on. Looks and taste great. Doesn’t dull the knife. Not sure where he came up with that one.

      But yes obviously you should not peel back the skin if it’s dulling for ur knife then it’s not that sharp but either way u can j use a serrated knife

    Great, simple method and the guests loved the results - thanks, Ray! As Ray says, cutting the skin dulls your knife so simply peeling it away is an excellent solution; simply lay the stripped off skin on the platter next to the dark meat - it goes quick.

      This video is 3 minutes long ... NOT 7. And I can assure you it is definitely NOT 15 MINUTES! That would be more than DOUBLE that of 7 and TRIPLE that of it's actual length.

    I watched the video 1 hr before carving, used this method and my girlfriend thought I was a cross between Emeril Lagasse and Wolfgang Puck. AND I kept the skin!

    I feel like if I let the turkey cool till I can handle it with bear hands before carving, I would be serving cold turkey meat at the table. I am not saying not to rest the bird after cooking. just saying to only rest it for 20 minutes or so before carving.

    Pierce the breast through the skin to keep intact. Then cut against the grain. Comes out crispy, juicy and delicious. Also 24 hour brine and deep fry.

    Once or twice a year and you are scare of dulling your knife. WTF! Start off with a sharper knife next time and you won’t have to worry about ripping the skin off.

    RAY, I AM SO GLAD YOU MENTION THIS AS ANOTHER CHEF JEAN PIERRE ROASTED A BEAUTIFUL 27 LB BIRD A FEW YEARS AGO BUT WHEN HE CUT INTO IT THOSE JUICES POURED OUT LIKE NIAGRA FALLS AND I SAID THIS IS ALL FLAVOR. BUT HE MOPPED THEM UP WITH PAPER TOWELS AND TRASHED THEM SAYING "IT'S ALL FAT" SHOULDN'T A 27LB TURKEY REST FOR AT LEAST 1 HOUR!!!
