Then let's not forget that it always depends on which area we are in Italy (I, for example, come from the Campania region, in southern Italy). We know well that each region, each area has its specialties. In Italy for any type of food, we can never generalize, because here most things are based on a regional level. Things, even in the same city, often change even from home to home, from family to family. Then you say only olive oil, this is not so correct because “Aceto di vino” (wine vinegar) and olive oil also go into these salads. Just olive oil is not enough in these salads. These are not salads where you only put olive oil. For example, we only put olive oil (obviously adding spices, such as fresh basil, oregano….) on a tomato salad. :)
My family's Sicilian, and I never had this growing up (I think this is Tuscan). But I did grow up in Texas, and I did eventually have a friend of Mexican heritage whose family also made a side dish with green beans and potatoes. My mind was absolutely blown. That combo isn't at all intuitive, but I've been a big fan ever since. Can't wait to try this one!

I just ate anchovies for the first time and liked them. They have such a bad reputation (at least in America) for being very salty that I had always avoided them.

I grew up with this salad, the much simpler version, made in the summer only, which makes sense because that’s when we had fresh green beans. I make it just like my Nona did … potatoes, string beans, red onion, red wine vinegar, evoo, oregano, S&P … that’s it! It’s delicious. I’ve never thought about adding tuna to it. It’s definitely something I will try when I make your version of this classic.

I made this yesterday and must say it was super easy, aromatic, and delicious! The dish has been chilling in the fridge overnight, so I'll add the cherry tomatoes today. I would make this any time of the year!

This is definitely a keeper. The next time you need to cut cherry or grape tomatoes try using two deli container lids. Put the tomatoes between the two lids, hold the top lid and using a sharp knife slice between the lids. This is a great time saver!
Looks fabulous Jim. Like you said there are a million variations available. You could grill up some Italian sausage and add it, roasted red peppers etc etc etc.

This is the first of your recipes I've actually made, even though I love your channel and watch all your videos (I'm vegan, but still love watching and learning), and it was amazing! Used an immersion blender because the vinaigrette just wouldn't come together, otherwise exactly as you did in the video! Thank you :)

This looks like a great potato salad! Great ratios on all the ingredients. It is a healthy potato salad, as you say. Nice alternative to mayonnaise, which I tend to limit myself on nowadays. It might be good with a few Castelveltrano olives as well.
Thanks for making this! I had asked a while ago, if you had a version of "Italian Potato Salad'. I make mine with potatoes, cucumbers & tomatoes in vinaigrette with celery seed. I think my Grandmother used oregano and only. olive oil in hers. All delicious!

James, did you work in Italian or Jewish-style delis? If the latter, I would love a chicken liver show that includes a chopped liver recipe. Folks are liver-phobic but chicken livers are a wonderful bargain and filled with iron. Thanks.
Red Bliss 10 Potatoes at the name of them and they are delicious they're good for soups too or stews because they hold together they don't break down as like a russet or or Idaho baked potato they don't break down as quickly as those so they're good for the red bliss potatoes for all in their shape when you're doing additional cooking or long-term cooking such as stews or soups Or some people don't like them for a big stuffed skins potato skins because they're hold the hold of shape much better than the ray of potatoes we might be one of the reasons why they get away so often

My Mother is French and this is very similar to her potato salad, which I make. It is delicious! I use garlic and no sugar.

I had a version of this years ago and it's incredible. I didn't even know it was Italian or that it's a type of potato salad but it's so tasty.
Made this tonight, but with sprouting broccoli (because we had no green beans) and some of our neighbours home grown potatoes…. Was immense.
I had a similar recipe that used asparagus and chicken broth. I like these kinds of potato salads even more than the ones with mayo.
