Chili and Rice is such a good combo. The cheddar and sour cream also a solid addition. Only missing fresh spring onion and pickled jalapeños and then it’s perfect.

Chilli with meat and beans, on top of white rice is by far my favorite food. Sadly in the Dominican Republic my only option to buy Chilli is from Wendys, which is decent but not a real chilli. I've been trying to do it myself but it's just not good enough with the packet seasoning, and on this country finding real/quality spices is almost impossible. The food looked amazing btw, I'm eating my last bowl of chilli from my last attempt in fact.

One thing ive done is just put some meat in a slow cooker with some potatoes and then eventually you add vegetables like bell pepper, onion, whatever your heart desires but when its close to done all you literally have to do is throw in rice and let it simmer for like 20-30 minutes depending on what temp. Rice absorbs the juices so well and it just adds to it.

we actually have something like this in the uk called chilli con carne
a quick google tells me it originated in Mexico/Texas so i wouldn't say its such a weird thing, its probably the best way to make a meal out of some chilli if you want to add body to it
and by body i mean a component that actually fills you up

I had an intern that taught me to eat chili with rice. I don’t like it, but my son does.

I eat indian curry with Naan and rice. But eat chili straight up. Sometimes do crumbled crackers but whether texas style or regular chili, regular straight up all the way. I never thought to add rice to it, and I already know it won't be bad at all, I just don't think it's necessary. Chili on it's own is perfectly acceptable imo.
